We visit the Cabo area every other year in December. We first visited El Matador in December, 2011 and my husband and I felt we had just dined in the home of the most gracious host ever. Little did we know at the time, that this is Pablo's home. We couldn't wait to return, and did so in December 2013. Pablo remains the most gracious host! We called ahead to let them know that I am vegan, and Pablo is so happy to accommodate - he actually gets excited by the creative endeavor. My meal was a vegan lasagna, with hand made square noodles, layered with vegetables and the most delicious tomato sauce. It was beautifully presented, as evidenced in the accompanying photo. My husband had the grilled shrimp entree, and it was equally delicious. He also dipped his clean fork into the vegan lasagna and was delighted! The ambience, whether in the rear courtyard with the fountain or inside the restaurant is delightful. The margaritas are the best in all of Mexico! Pablo offered more tequila, since my husband wanted "mas fuerte, Señor, por favor"... which prompted a display table side of several excellent tequilas to be poured directly from the bottle into my husband's margarita. He loved it! We also received a special performance of Pablo's "matador moves" with the muleta (cape) he actually used in a bullfight. He apologized to me, knowing I am vegan, and then stated that that one bull will feed many people. He is a product of his upbringing, and I can't forget that his upbringing has also made him a most gracious host. I can't wait to see him again in December 2015!
