Owner description: Da Mhile (pronounced da-vee-lay) is the UK's first organic micro-distillery and the producer of the first organic whisky in the world. We have been producing high-quality artisanal spirits on our organic farm in West Wales since 2012. Our first product 'ORANGE 33' is an organic orange liqueur that won a True Taste Award for its very first batch! Our second product, Da Mhile Botanical Gin is highly regarded by gin aficionados and is made with 20 botanicals. We also make a salty, unique seaweed gin using locally-sourced seaweed. Vodka, whisky, rum and brandy are all in the pipeline. Distillery tours and tasting sessions are available by prior arrangement.

We visited Da Mhile during a 'soft opening phase', so they were still getting everything ready for when they properly open to the public.
I've visited around 7 distilleries, mainly around Islay, and this is nothing like any of the tours I've attended before. Da Mhile is a proper farmhouse distillery; organic, local, compact, diverse.
When we arrived, we met John outside the main building who gave us a brief introduction and then took us around the distillery, showing us all parts of the process from brewing (they were working on their orange liqueur that day), through to distilling, bottling, labelling as well as where they age the whisky - all under the same roof.
John’s stories from his years as an organic farmer as well as his ventures into the world of whisky are what make the tour - he is a fascinating individual that you could easily listen to for hours. He gave us a complete history of how he began as an organic farmer, how he approached Springbank distillery in 1992 for the first organic whisky of the modern era and how he later commissioned a few barrels from Loch Lomond in 2001.
The highlight of this tour is the tasting room, still unfinished at the time we visited, but you can easily see the potential. It’s located on the top floor of the building, with the top of the still column protruding into the room from below. In the centre is a rustic solid wood table with each of the spirits that Da Mhile has produced, from the original 22 year old organic Springbank commission, Loch Lomond Malt and grain releases, through to the gin, seaweed gin and orange liqueur. John mentioned that they have potential to create any spirit and there were hints of rum, whey vodka and other interesting intoxications that they were considering for the future. Obviously the one I’m interested in is the next generation of their organic whisky which they hope to distill later this year.
Overall the tour is exactly what you expect from a venture this size - small, personal and passionate about their methods and products. If you’re looking for a modern multimedia distillery tour, you won’t find it here, but if you want to see the genuine article with the people choosing the ingredients, working the still, selecting the barrels and selling their product, then this is the place to visit. Wales is very lucky to have them and I look forward to returning once they are fully open and seeing what spirits they are creating.
