Description: GB1’s philosophy is quality with simplicity. The 2 AA Rosette restaurant offers a fantastic choice of the finest and freshly caught seafood from Brighton’s shores. Executive Chef Alan White's brigade of passionate and inventive chefs add a contemporary touch to classic British cuisine and seafood favourites. Standout menu items include sea bass with suckling pig chorizo, and the king prawn pan-roasted fruits de mer platter, while new seasons additions include wonderful twists on retro classics such as the rhubarb almond cake with burnt apple puree. The seasonally changing menu also boasts meats from the grill namely the delectable Aberdeen Black rib-eye steak, classic Sussex favourites and vegetarian dishes. GB1's contemporary vibe plays sensitively to the hotel's historic character and Regency architecture, boasting wonderful features such as the striking central fish bar built around the existing columns and central ornate chandelier.

We were shown to our sea view table and advised of the specials of the day. Pre-ordered champagne arrived soon after, which was very enjoyable. Starters we had were sushi style scallops and crab cocktail, then we both enjoyed steak, I had langoustines with mine which were sweet & delicious. Desserts were strawberry mouse & shortbread, and lime panacotta with a mini chocolate pudding - the serving slate was decorated with crushed pistachios and crumbled dried raspberry, fresh raspberry & tiny pansy's - what a work of art! Both enjoyed a very special meal. Would love to dine here again without a doubt. Food was excellent. (Advise to book 1 week ahead at least)

Wonderful evening spent in GB1, terrific food especially the moules mariniere. The staff are so friendly and attentive, definitely be returning soon to try the oysters and champagne .

The decor is stylish and modern and beautifully lit with a relaxing atmosphere. Each course was absolutely superb with creative and beautifully presented dishes including a fabulous lobster, monkfish goujons and exquisite deserts. Flawless service from helpful and knowledgeable staff. Excellent value for money.

We ate here last Friday and we were not disappointed. We had a beautiful sea view table and chose fish soup (delicious) and the smoked salmon with brown bread ice cream - this was rather innovative but worked really well. We then had the crab and thai fish curry. The former was fabulous, the portion size was huge and the crab fresh and succulent. The curry was not too spicy and beautifully presented with the included side dishes. The service was excellent and we felt really pampered and spoilt. Well done to head chef Alan and his staff. We can't wait to return!
