Our meat is aged for 28 days and then air-dried for an extra 5 which effectively remove all the moisture from the meat which accentuate the flavours, especially in a cut like the Rib-Eye which has a nice amount of fat in it which is the part that will have the most flavours.
Like i have said last night, it is a stronger flavour and not to everyone taste and I would have preferred giving you a different cut this time rather that you not enjoying your meal. Lesson learn, we will be more informative when we offer this type of meat in the future.
Again, my sincere apologies for not insisting for you to change your main course and for evening not being as pleasurable as it should have been.
You are right about the château Musar, this is really an incredible wine.
