Everything about the 6-week Cook’s Certificate here was excellent. It’s a sizeable undertaking of time and money, but I thought it was well worth every second and every penny.
I’d been wanting to do something like this for about 20 years, but most other courses are either too short or overly industrial and slightly intimidating. Cookery School are extremely serious about teaching cooking, but manage to go about it in a very relaxed and personal way. The staff are all faultlessly enthusiastic and passionate about making you a better cook, and the days really flew by.
I now feel confident making things I would never have dreamed of tackling before: puff pastry, macarons, praline-filled chocolates, breads of all kinds, pasta, and I even recognise and understand all the wines on offer the supermarket after our WSET course. Even if you’ve cooked a fair bit, the course is packed with useful tips that will improve how you tackle the ‘basics’. It’s revolutionised my approach to omelettes.
The school is also admirably rigourous about ethical ingredients and practices and their dedication to sustainability certainly opened a few eyes. I definitely read a lot more when I’m shopping now.
The cherry on the cake was the placement Ros arranged in a restaurant. I’ve loved the Moro cookbook for years and I never dreamed I’d be there chopping courgettes, making yoghurt cake or plating up desserts. Yet there I was, and after the course I felt confident I could handle whatever they threw at me.
The Cook’s Certificate has certainly been life-changing. Time will tell just how big that change will be.

They do not teach you. They only make you repeat some recipes without the science behind that allow you to understand and to be creative. Also, the customer service is terrible, they are nor comprehensive neither sensible. I felt as they took all the money they could from me and more 😒. Not helpful at all.
The only good is that it was clean.

All the elements that you list are ones that do not resonate at all with us as we feel that we work hard to ensure that everyone leaves us feeling enabled and having enjoyed their class. We are proud of what we do so it would be very good to have more detailed feedback. We go out of our way to explain, as far as we can, the reason behind techniques that are taught. Please do come back to us so that we can understand what you felt was missing and so that we can address those issues. We are not used to having unhappy students so would like you to be in touch with us again. We have 5 stars from Westminster Council for hygiene so are pleased that you were struck by that.
I’m a keen baker but I had not been able to make profiteroles yet. After doing this Amazing course( which was run by a really passionate and friendly man who really knew a lot about what he was doing) I finally have figured out the right way to make profiteroles and have a lot more knowledge of all types of pastry. The recipes we used were fun and simple, but really effective and the 3 and a half hour session was very enjoyable. I highly recommend this cooking school!

What a great day I had with Rosalind and Jon at the Cookery School. Great 1 day course on chocolate making. Jon and Rosalind were extremely knowledgeable, personable and fun and really brought the art of chocolate making to life! For those amongst us with dreams of making chocolates as a small business to those who just want a deeper appreciation of this amazingly versatile bean, this is a wonderful course. Not only do you learn about chocolate and how it’s cultivated but you learn how to make chocolates using mounds, making at least 4/5 delicious chocolates yourself to take home and eat. I thought 1 day wouldn’t be enough but it’s enough to teach you the most important facts and methods you need to know to make your own wonderful (and professional looking) chocolates! I couldn’t recommend it more!

Even though the course has "Absolute Beginners" in the title, I wasn't sure I would qualify.
However, within minutes of the first evening, I knew that it was a good choice.
I can't imagine a better introduction to cooking: the instructors and assistants were highly capable, patient and humorous; and I was fortunate to have enjoyable fellow students.
I'll now need to practise, but I wouldn't be surprised back at the school someday, for the next level.
