The restaurant is open daily for breakfast from 7.30am to 10am and serves continental and full Irish breakfast. Dinner menu is served from 18.00 to 21.30 and is a popular choice for residents and non residents alike. The New Ship at Dooley's was offering, like other hotels in Waterford, an early bird menu at €22 pp or a special for 2 at €59 for 4 courses plus a bottle of house wine (June 2011) from 6pm. This is the going rate in Ireland for dinner. House wine is around €16 a bottle. We chose The New Ship as it offered more choices. The restaurant is lovely and restful: no extraneous decoration, wood partitions with cream painted walls and burgundy upholstery. Choose a table up the step behind the partition as the hotel coach parties eat at the tables on the main floor. Courteous welcome from an attentive Noel and his efficient team. Gorgeous homemade brown soda and tomato and herb bread. Nicely managed portions veering towards the generous side. The chocolate and coconut profiteroles are to die for. All in all a lovely meal in the kind of place we like to eat.

I had dinner with my boyfriend in this hotel tonight and I have to say that it was the most perfect night ever. As we arrived twenty minutes earlier, we had a drink in the bar first and the bar staff were so nice..polite and friendly. They even said goodbye when we were leaving, you don't get that in many places around Ireland From the minute we walked into the restaurant, the staff were so helpful and polite. The food was unreal and so delicious. We had a three course meal for just under €50, which in Ireland is very reasonable for two people. I would book a table for dinner in this hotel again. The place itself was very clean, tidy and well presented.
