Found this place on Trip Advisor and the reviewers were on target. We decided to splurge and opted for the "Harmony" menu where the server inquires about food preferences and/or allergies and then you get the chef's creations of the day in a small plate tasting menu they called 12 courses, though we counted a few more. I'm glad we tried this route. We ate some very creatively prepared and presented dishes such as a thin pastry horn filled with creme fraiche and tapenade; a cannelloni stuffed with frog terrine; foie gras with thin fried potato slices, watercress, passion fruit sauce, and sweet potato puree; langoustine tails lightly fried on a bed of chili in a white burgundy sauce; turbot steamed atop a white asparagus relish in tomato sauce with asparagus and roasted cherry tomatoes; duck breast with a red onion roasted in red wine atop julienned veggies; a fabulous cheese selection and two offerings of four dessert samples (that's right, 8 different dessert tastings).
The atmosphere is modern, tables adequately spaced so even though the place was crowded, it never felt so and conversation was not affected. The wine list is the size of a Stephen King novel. Staff was friendly and attentive and willing to answer our questions. If you get the Harmony menu take some time 3+ hours our experience and some $$$. The option costs about $130 inclusive and the wine list is extensive but not inexpensive.
Great place for a special occasion. One of the best meals I've ever had. Compares favorably to The French Laundry in Napa CA.

Food:
The previous night we were having dinner at La Dame d'Aquitaine - the ambience was better over there, but the food by Stephane is much better.

The food was nicely presented, menu selection was to my expectations.

Staff
Staff was friendly. I couldn't speak French and hard difficulties understanding their English. Everything went smooth anyhow.

Ambience
We were seated behind just behind the cashier, in a corner and was not the best Table in the house. I book a table a few days before and i feel i was sitting by the Highway (Motorway). Our table was not the best.

We are frequent travelers but not gourmets. We do like to eat well and found the Trip Advisor reviews for Dijon. Put simply, this restaurant is superb. Decor is elegant, as was the welcome. We were welcomed in casual tourist dress while at nearby tables were the usual, immaculately dressed French families. The Engkish speaking maitre de was wonderful, patiently explaining each dish and menus were available in English. We had the €50 lunch menu which was just out of this world. Small taster plates seemed to come before every course. Wonderful assortments of taste, all carefully explained. The wine menu was huge and I went no further than their recommendations on page 1! Service was friendly, elegant and unobtrusive. This was one of the most memorable meals we enjoyed anywhere. Our advice to anyone visiting Dijon is "Don't miss it." And if you see a negative review in this section, it must be fictional.

I went for a birthday lunch. I was going to order the 50 euro menu but they suggested that the 25 menu surprise was built around fish and delicious. It was. The first dish of a smoked haddock salad was beautifully arranged. This was followed by a superb fish brochette with a lovely and intense shrimp sauce. There were three wonderful desserts with different consistencies on the dessert plate. I cannot speak highly enough of the beauty of the food, its fine taste and the friendliness of the staff. My partner had a previous stomach upset and they brought him a finely cooked plate of rice beautifully presented in a black plate. They were so understanding. The wine list is superb and there are fine wines also by the class.

My partner and I arrived in Dijon at 5 to 2pm on Saturday 18th February, without having booked a table because we were unsure of how long it would take to arrive in Dijon. We happened to find a parking space near Stephane Derbord and we went in. We were delighted that the chef would accommodate us at that late hour. The service was fabulous, the food out of this world. We went for the 66 euro 2 course menu and a nice bottle of wine. Whilst it was called 2 courses, we actually had 8 different dishes (ok that does include coffee and a chocolate!), but wow! There were the courses we ordered, and cheese, but also lots of "in between" courses, which were a wonderful surprise and all delicious in their own way. Presentation was wonderful also - each plate a work of art. My partner was almost in tears at his dessert, he found it too delicious (to the extent he wouldn't let me even try a bit!). This is definitely a place we would return to for a truly relaxed and memorable meal.
