The food was very good. The service was above average. My only criticism was that it was a bit impersonal and many items on the small menu attracted a supplement. The food though was unimpeachable. We ate outdoors and I was offered a rug unprompted which was kind. The wines were first rate.

“You can do better”

The food was amazing. So good, in fact, that it should have been able to make up for the dismal service. But it did not. Food this good deserves an amazing wait staff. The people working the night we were there could not even be called adequate. This restaurant takes (and may require) reservations. We booked months in advance. The town of Carcassonne was predictably packed. So there is no reason the restaurant should have been understaffed. We showed up on time for an 8:00 (20:00) reservation. We were happy and well-dressed. After a very short wait we were shown to our table outside in a courtyard or patio. At 8:20, despite the wait staff going back and forth by our table many, many times, no one had even acknowledged our presence. Not a word or gesture to imply they would be with us soon. I told my husband that I would wait until 8:30 and then I would leave. The waitress showed up at 8:25, and was very cold and impersonal. There was also a waiter, but it was a punishment when he came by because he smelled HORRIBLE, no, worse. We asked for a second bottle of water (for purchase.) it never came. We understand busy restaurants and are patient. This was not just busy, it was rude. Basic table waiting training would alleviate all the issues here. Of course the tip is included in the bill here, so maybe they just don't care. We have had many good and even great meals in France and Spain this summer; many more are yet to come. This is a great part of the world to eat. The sad part about this experience is that the kitchen staff here is truly amazing and have to be trying extremely hard to turn out such great food. Their own wait staff is not just a disservice to the public, it's complete injustice to the people in the kitchen. BTW, I'm rating it a terrible value not because it was expensive, it was reasonably priced, but in consideration of the fact that it was not an enjoyable experience because of the waiters and I could have spent the $ somewhere better.

Nous sommes désolé que votre expérience dans notre établissement ce soit mal déroulé, nous avons bien pris en compte vos remarques et nous ne manquerons pas de transmettre vos compliments à l’équipe de cuisine.

Concernant le service, nous n’avons malheureusement pas noté à quelle heure votre commande à été prise cependant si cela était long pour vous nous nous en excusons. Toutefois concernant les autres points, service froid et impersonnel, votre mari ne semblait pas du même avis car nous avons plaisanté concernant le choix du vin etc… et au moment de quitter le restaurant il n’a pas manqué de nous dire que tout c’était bien déroulé.
Votre problème majeur étant le temps de prise de commande nous trouvons cela triste de « ressasser » durant tout votre repas au risque de ne pas profiter de celui-ci.

Vous n’êtes pas sans savoir que ce qui est inclus dans l’addition n’est pas le pourboire mais le service, ce qui correspond à notre salaire fixe, le pourboire n’étant pas obligatoire et fonction de votre envie.
L’effectif de notre restaurant correspond au nombre de couverts que nous accueillons, toutefois sous certaines conditions, dans votre cas une table de 7 personnes à servir très rapidement, il est possible que le service prenne un peu plus de temps.

According the service, we unfortunately didn’t note what time your order was taken, however if it was long for you we apologize. However on the other points, « cold and impersonal service », your husband did not seem to even notice because we joked about the choice of wine etc ... and when leaving the restaurant it did not fail to tell us that all went well.

Your major problem is the time to take control we find it sad to "rehash" during your meal might not enjoy it.

“Great food, but service a little prickly”

So, the cuisine is amazing, but the ambience and relatively impersonal service needs a little attention. Somehow the place lacks the warmth and the waitrons seem to be "programmed robots", as opposed to being members of your eating expedition. We had opted for the foie gras starter, followed by the sea bass, and both were superb. But, our neighbouring table was only inches away, and we had to indulge in the conversation of our fellow patrons, which did not add much pleasure to the evening. 5 stars for the chef, but the rest of the story needs a bit of work and TLC.

La météo de dimanche soir (pluvieuse) nous a obligé à accueillir un certain nombre de table en même temps, la majorité de nos clients comprennent cela et accepte une légère attente avant la prise de commande afin que celle-ci puisse être agrémentée d’explications etc…
Dans votre cas cela ne paraissait pas acceptable nous avons donc pris votre commande sans avoir eu trop le temps d’agrémenter celle-ci. Toutefois au cours du repas nous avons pris le temps de « bavarder » en vous expliquant la différence entre le loup de mer et le bar de ligne, etc…

Nous sommes désolé de vous avoir donné une impression d’impersonnalité et de froideur à votre égard, cela n’était pas notre intention.

Excellent meal with matched wine. Service good although the specials were only given by the young lady in summary without the full description which we later heard our waiter give other diners.

“Formal dining”

This was a real formal dining experience. The food was good and the service excellent. Booking essential. Our hotel recommended the restaurant.
