The Rhine embankment promenade between Burgplatz and Apollo Platz is a must do when visiting Dusseldorf. Yes I agree the bars are a bit touristy , you will get better food in some of the back street restaurants back in the Old Town, and it does get very busy on a hot summers evening. But the vibe of walking along the Rhine or sitting beside it with a cold beverage always outweighs that. There's quite a lot of choice so always good to walh up and down once to see which one takes your fancy.
If you have the time and want to get away from the crowds then I can recommend to continue to walk north along the river path in the direction of the Nordpark. There are bars and restaurants at intervals accessible from the river side and you can walk through the Nordpark to the U-Bahn station back to the old town.
And if you are into walking then you can carry on around the bend in the river to reach Kaiserwerth, in about an hour and a half with its bars and restaurants and the same U-Bahn connection back into town.
