If you are in Madrid, take a day trip to Segovia. If you are in Segovia go to Jose Maria. Not even sure where to start. First they were more than accommodating. After sightseeing a bit we realized our original reservation would not provide us enough time to see everything before eating. We walked past the restaurant on our way to the Cathedral, asked for a new time, no prob. When we finally got there our server Luis was great, we were seated right away. He explained that all we need is the cochinillo and he was right. They did start us off with their version of gazpacho, which I’m guessing was infused with some of the au jus from the cochinillo. Long story short, it was delicious. The cochinillo quickly…I mean remarkably quickly, followed. It’s amazing to see. Luis allowed my friend to help cut it, which they do with a plate…a plate, it’s that tender. Luis also suggested the house red wine. Get the house red wine…delicious and 11% alcohol. Two bottles later, a good time was had by all. This place was great. Most importantly they seem to truly appreciate their patrons. Luis gave all the ladies in our group tiny souvenir replicas of the dish the cochinillo is served in at the end of our meal. Then we arrived back in the states and my friend posted the video of her cutting the pig on Facebook, someone from the restaurant thanked her for coming out. Awesome…an absolute must go.
