Just got back from two week vacation in Rome and got the chance to eat several times at Velando. We were introduced to this restaurant by a Monsignor who has been with the Vatican for 50 years and truly knows what is good around the area.
This is a charming restaurant that might have no more than 10 tables (If that) and is attneded primarily by one of the owners. She is not only an incredible host, but truly demonstrates that you do not need multiple waiters to provide good service. Most times we were there, she would take care of 3-4 tables at a time and at no moment did we feel unattended.
The Chef uses primarily seasonal ingredients and foods that are cooked to perfection. If they have it, you must order the Risotto a la Miele (Honey Risotto) and the grilled cheese with quail eggs apettizer.
I have been to Italy multiple times and have eaten at some of the top restaurants in the city and if you want to eat some good Italian food in a cozy environment, this is the place to go. This is not one of those Vatican area tourist traps.
