We did the course as part of the Tuscan Sun Festival and for me it was the highlight. Great fun, informative and satisfying to understand how cheese is created. To see mozzarella (without doubt my favourite cheese) being made and then to eat it whilst still warm was a magical experience. The Magi family are truly passionate about their profession and this came out in the enthusiasm in presenting this class. My only complaint is that we could not spend more time on the course watching/waiting for some of the cheeses to fully mature (5-10 years). Impressed they were able to fit so much into 3 hours which included lunch matched to exquisite wine. Would highly recommend this course. We also enjoyed the pasta in this atmospheric restaurant.
