Owner description: Our project was born on 1980. Just after a master in Philosophy, Moradei Andrea founded in collaboration with other teachers the Italian language and culture centre for foreigners Koinè. This is the starting date for all our Italian language and culture programs. In 1996 we opened the Enoteca de’ Giraldi, offering a cultural approach to Tuscan wine and food. The Enoteca was from the first moment both a wine restaurant then a point of meeting for people interested in wine tasting, cooking lessons and wine tours. In 2003 we opened the wine and food services agency Vinarium, with the aim of offering the best of our wine and food culture, and at the same time guaranteeing amusement and professionalism to our clients. Today Vinarium offers guided wine tasting in the best Florentine enotecas, cooking lessons in historical buildings and guided visits to the best Tuscan wine makers.

We worked with Vinarium to arrange for two chefs (Valentina and Barbara) to come to our villa, near Volterra, to instruct our group in a cooking class. Everything was absolutely wonderful. The chefs were very professional and taught our group many great lessons on the techniques of pasta making and Tuscan cooking, as well as how to find the best ingredients and how to substitute when you don't have exactly the right ingredient, depending on what is in season and what you have in your home! Both chefs were very sweet and gracious! Everyone got the chance to try their hand at making each of the dishes we prepared. The food was phenomenal, it was so great to finally learn how to cook some of the Tuscan dishes that we have all been enjoying for years! At the end of the class they served us the dishes prepared, all paired with wonderful local wines. It was a brilliant afternoon and evening, and a memory we will never forget! Thank you so much for everything!

This was one of the main highlights of our trip to Italy! We booked a half day tour that included trips to two wineries, both of which were full of charm (no big group tours; these were one on ones with the owners) and very accomodating for English speaking visitors. From the great views to the great wine it was wonderful all around, particularly the knowledge and friendliness of our guide Valentina, who went out of her way to set up a dinner reservation for us that night at a great under the radar local restaurant (one of our top 3 meals on the entire trip). We plan on booking with Vinarium again the next time we are in Florence!

I was in Florence for the culinary week and i had the best time ever. I learned sooo much about cooking, wine and food in general. Valentina and Brabara were awsome. You can feel their passion that they have, for the things they do and its such a pleasure to be around them. They are just the best company ever and they have so much knowledge about wines and food that you can really learn so many stuff from them. If you're thinking about going To Tuscany to learn something about food and wine, well this is the best team to have there, so stop thinking and i can assure you that you will not be sorry.

If you want someone who knows Tuscany and you don't want a large tour with lots of people, look no further! Andrea, Valentina, and Marc Antonio totally took care of us while in Tuscany. The personalized private tour that Andrea arranged in advance was absolutely incredible. We stayed at a gorgeous farm estate that produces their own wine and even grows saffron. We had a candlelight dinner in it's 12th century cellar. We toured small vineyards with fantastic wines. We had a 3 hour walking tour that was amazing with a lunch at our guide's private home. We had our own private cooking class on a vineyard with a setting out of a dream. We came away learning so much about Tuscan wine, history of Tuscany, cooking, and we met the most wonderful people along the way. Yet we never felt we were on a tour, just with friends! I have travelled all over the world, but what Andrea did for us in Tuscany was off the chart! I HIGHLY recommend using Andrea and his team. Turn it over to him to have a trip of a lifetime. He made our trip something beyond special! I am passing the word!
