I have been to Italy many times with my husband but this was a special mother and son trip and I wanted my 26 year old to experience the real Italy as best we could. He loves to cook and we both have an appreciation for nice wines, so I thought this would be a fun day to bond and have a good meal. Wow, what an understatement. We met Jacopo in the square, as promised, and with a young couple from Chicago, we headed to the market. This in itself was an education - Jacopo has such an amazing appreciation for fresh food. We proceeded to his mother's beautiful flat and on a cozy rainy day, with the kitchen windows wide open on the beautiful views of the hillside, we chopped and stirred, and listened and chatted with this amazing man and wonderful teacher. He has a passion for food, and took great pride in showing us the simplicity of preparing such delicious dishes. We made salad, fresh ravioli with spinach and ricotta, a pork dish, the most amazing risotto, and my son made the tiramisu. Along with the fabulous meal, we learned many little secrets! Finally, after about 4 hours of lessons and fun, we sat in the dining room and shared this wonderful meal, along with Chianti, with Jacopo and our new found friends.

My husband and I love to cook, but are not experienced by any means beyond what our parents taught us in the kitchen growing up. So when we planned a two week vacation in Italy, we knew we wanted a cooking lesson to be a part of it. We didn't really have an idea of what the day would be, as we've never taken a class before, but our day with Jacopo exceeded every expection we could have had. Even the term "lesson" is misleading as it was so much more - an experience in Florentine culture, customs, creation, and of course cuisine. It really felt like he was a good friend, who just wanted to share with us his passion for food. His mantra, that cooking doesn't have to be complicated and is an amazing tool to bring people together, is so easily felt on his local fresh market tour and at his home kitchen. We've only been back in the States for three days and have already used lessons from his cooking class at home! It goes without saying the food was amazing. If I hadn't been there watching us make each dish, I would have never believed we could have made anything that tasted so good. But the best part is, he really teaches you in a way that I'm confident we'll be able to do it again at home. As for the title of the review - we spent two weeks in Italy, and no disrespect to the mass we attended with the Pope, the guided journey through remote Tuscan vineyards, and the private tour of ancient Roman ruins, but our day with Jacopo really was the highlight. Thank you Jacopo - you will have us returning to Florence for years to come!

I was looking for an experience that we could do as family, that would engage my teenage son and daughter. We had taken a cooking class a few years ago and it was great fun. We love food, value our family meals and my wife and I love to entertain. This experience with Jacopo exceeded all our expectations.

The day started at the market getting to buy our food for the dinner. Beautiful vegetables, fish, cheeses, etc. The late afternoon started with Jacopo explaining his philosophy around fresh, natural food and how simplicity can excel above complexity. Each one of us was assigned a dish with a series of tasks. Everything was from scratch with explanations on how different products mix/react with one another. Our experience and menu included spinach/ricotta filled ravioli, with pasta made from semolina flour, rolled out by hand-crank. Naked ravioli (the ravioli was naked, not us), butter-sage sauce and a red tomato sauce, beautiful fluffy gnocchi, fresh sardines cooked ceviche style, sea bass with tomatoes and lemons, and of course, tiramisu with a secret ingredient.

The lessons were incredibly fun, engaging and educational. We have already made our own fresh pasta, ravioli, sauces and tiramisu at home. Our cooking class was in central Florence in Jacopo’s mother’s beautiful flat with an enormous kitchen. Jacopo also has a house set up for cooking lessons outside of town. Oh, I almost forgot, the dinner we made was amazing, as was spending time learning about the culture of Italian food.
