Owner description: Italian Cooking School in Lucca, Tuscany, day classes as well as 7 day all inclusive programs with tours and field trips. Hotel rooms available in our apartments. Intensive cooking classes, 8 to 14 recipes per class, hands on cooking, include lunch and recipes in English. Classes also in Deutsch, Francais, Espanol. My daughter received Chef Paulo’s cooking class as a wedding shower gift. They enjoyed their experience so much we decided we should go when on our trip. Chef Paulo is so easy to schedule with via email and was even kind enough to move our class when my niece wanted to join us and had a time conflict. We ended up having a private lesson for just the three of us on a Sunday morning (Sundays are great as much of Italy closes down).
We made so many wonderful homemade pastas and sauces that I am getting a pasta machine at home. As you can see from the photos there was great variety as well as lots of space to move about. We enjoyed eating what we prepared-even the squid ink pasta. The wine included was delicious too!
Chef Paulo has a wonderful sense of humor (think “dad jokes”) and is an excellent teacher. He cooks some and you cook some. His English is perfect if that matters to you.
You go home with all the recipes and directions. Don’t hesitate to take his class if you are in the Florence/Lucca area. You will not be disappointed!

This was my third cooking session with Chef P: the first being many years ago when he was in Porto Venere. I took my brother to a lesson 8 years ago in Lucca and I took him and his son this year for a full day - a morning lesson and an afternoon lesson.
This is both hands-on and discussion with real recipes that can be successfully recreated at home. Chef P's English is great - no one should have a problem understanding him. His staff makes sure that everything required is to hand and ready. Be prepared to eat since each session includes several variations and courses. Don't be shy - ask questions.

We chose Chef Paulo’s favorite dishes. He said they were his favorite because they were easy to make and tasted good. He was right!! Amazing!!!!

We've just returned from a “7-day Under the Tuscany Sun” Cooking School on May 27 to June 2nd with Chef Paolo Monti. What an awesome experience!! We were a group of 9 who attended and EVERYONE thoroughly enjoyed the classes and the hotel accommodations offered at the school. Chef Paolo is charming and an excellent teacher who is very passionate about cooking. He is also quite the comedian with his jokes and puns. We all laughed so much. He taught us valuable techniques in the kitchen; he taught us how to prepare different stocks for added flavour in many dishes; bolognese and ragu sauces, pistachio and shrimp sauce, all so yummy! We made pasta and risotto; antipasti; we learned how to shop for and cook fresh fish; carpaccio; AND...the desserts were fantastic: Semifreddo, Panna Cotta, Cantuccini (biscotti), and so much more. The field trips to Parma, Modena and Chianti were wonderful! My husband and I highly recommend this cooking school. It was one of the best experiences in our travels to date. Thank you Chef Paolo for making our 7 day stay so enjoyable. We hope to see you again. Susan

My sweetheart and I signed up for the two cooking class, one market visit cooking school option. We stayed at Chef Paolo's place for another couple of evenings, to have the time to more fully explore the surrounding countryside.

Chef Paolo cooks almost intuitively (borne, no doubt, of years of study). During our eight hours of cooking with him, we never saw a measuring cup or spoon. We learned that olive oil and red wine, either bottled turned over for multiple seconds, are two of the primary ingredients in many of the Tuscan recipes we cooked. We learned about the simplicity of delicious tira misu and other iconic Italian dishes.

The apartments at the school are directly above the restaurant, so on a Friday night, things may be a little noisy until the restaurant closes, but we found that a small price to pay. We enjoyed Chef Paolo and his staff, and would happily go cook with him again.
