While working with a personal tour guide of Lucca, she gave us a recommendation for lunch here. My dad asked if it would be possible if I (a highschool graduate considering culinary school) could see the kitchen and talk to the Chef about my interest in cooking. The restaurant got back to her and she said yes and I imagined a firm handshake and a 30 second pep talk. When we arrived we discovered that the restaurant wouldn't normally be open the day we came, but opened special for my big family and our guide. I was quickly introduced to Chef Gabriele and he gave me an in depth tour of his facilities(kitchen, appliances, herb garden) and had me help him prepare aspects of the meal while teaching me all about restaurant life. After an incredible 4 course meal including house made bread, pasta, and pastries he told me he would help me find an apprenticeship in Italy if I am interested in cooking professionally later on in life. What an unforgettable experience spent learning and eating with Chef Gabriele!
