Spontaneously decided to go for dinner on a week night intrigued by positive TA reviews. Expectations were not only met, but truly exceeded - finally a place in Basel that can actually deliver modern haute cuisine with excellence!

Delicious and very creative food (yet not to the extreme "art" form) - the duck in particular was divine! - wonderful wines, excellent cheeses and a really unpretentious service & decor. A winning combination!

Following our brilliant office dinner at Osteria Tre (Bad Bubendorf) last year, I was challenged by the team to top the experience this year. And by jove we certainly did. I had read and heard rave reviews of Matisse, and not having experienced molecular cuisine before, I decided this was certainly worth a try - especially in the light of the recent Michelin star they earned.

We were not disappointed - not in the least, on the contrary! Some team members who'd eaten at Gordon Ramsey's in Paris thought I was hyping this restaurant and were a little skeptical. I believe I convinced even the less adventurous - not me, personally, but certainly the exquisite cuisine.

Contrary to others who've written here, our courses were served very quickly - hardly any long pauses between. But, as was mentioned here, if you are in a group, everyone must order the same dish - which really isn't a problem because every dish is excellent. Also, the choice of accompanying wines was very good - with one little let down - the red for the main course could have been better. Veal snow - oh my God! Literally snow that melts in your mouth with a fantastic explosion of veal jus.

A truly wonderful experience. If you're reading this, you must try out this restaurant. It is one of those little yet undiscovered jewels - it might not remain that was for long.

Matisse is one of the most creative and inspiring restaurants in the world. I dined at many top restaurants in New York (e.g. Jean Georges, Per Se, The Modern) and Boston (O Ya, Clio, Journeyman) - Matisse is at the very top. The food is of amazing complexity and sophistication, combining dozens of ingredients into explosions of flavor. And the presentations are stunning pieces of art. It is not cheap but Matisse offers so many amuse-bouches and intermezzos that a 4-course meal consists of 8-10 courses. Chef de Cuisine Erik Schroeter (former chef at Viva!) is a genius. The one Michelin star is well deserved, and it is only a matter of time until he adds another one.

The restaurant is a true michelin place, with very unique tastes but it is not for everybody especially if you like simple and basic things for your food!

The service takes too long to bring orders and in general you must be very patient for everything....

Matisse in Basel is a nice example of fine dining.
We were there on a Saturday evening and there were only 6 guests.

The inside is a mixture of styles. The building is quite new, which means a lot of square shapes. But they do try to make it a bit cozy.
In our evening there were 2 very nice waiters. They know their job and did it with a bit of a human touch. Being in Basel, it became a mixture of German, French and English.

The menu changes every day, they say. I guess some good dishes return now and then.
You have the choice for 3 to 6 courses. In real you start with 2 time 3 amuses followed by two starter plates. Afterwards you start with a Fish and afterwards some Meat; in between you have a something small in between. You end with some cheeses followed by a desert. When it is time for coffee they bring out the homemade chocolates (delicious).

All the dishes are made in the same style. Everything is BIO and made from scratch; I guess that is fashion. The chef uses quite some acidity to get the taste in the dishes. Not in a disturbing way; we liked it, but we did notice it. There ware not that many sweet things, except for natural sweet tastes from the products. The sauces and creams were very taste and all the ingredients themselves were cooked to perfection and had very nice natural tastes.

There is a possibility of a wine paring; which is in my opinion a bit on the pricy side. The wines per bottle are also quite pricy.

I wish the restaurant all the best as it is a very nice possibility to treat yourselves!
