Staying at the Palace this January, I have been trying all the restaurants there. One being la Fromagerie. What to expect is a good fondue and other classical cheese dishes like raclette in this restaurant. The truffle fondue and the raclette we had, were very good, so no disappointment there. The italian Maitre D who has been part of the Palace forever was very friendly. So really nothing to complain about, other than the waiter who was absent and blind most of the time we had dinner. We had to basically stretch our arm to take our bottle of wine from the ice bucket and serve ourselves. Not to be expected in a leading hotel of the world 5 stars hotel, but one of the old kink that the Palace Hotel still seems to have a hard time to get rid off; easy and very difficult to change as it is a mix of training and attitude of the people working there that they still need to work on to be the Palace of the 21st century.
