Every time I visit Maastricht I try to have a meal at Toine Hermsen, which for me is the best culinary experience you can have in this wonderful city. The restaurant at first gives you an understated impression, more like a bistro, but once the food arrives you will think differently and recognize its unique class. If you cannot get a table for dinner try their lunch menu which for 35 euro is as much value as you can get in a michelin star restaurant. In particular if you are a fish lover try the friday lunch menu, which generally has a fish special. The wine list is excellent, trying to offer some very good alternatives instead of going for the big ticket traditional options. Some interesting German wines can also be found for those who love their Riesling. This is a place for the serious gourmet - not to be missed.
