It is great to have the chance to see a cheese market functioning as it did hundreds of years ago. The marketplace is used by the neighboring restaurants on other days for outdoor seating, but all that is cleared away for the Friday Cheese Market. I recommend getting there about 15 minutes before the activities start--30 minutes if you want to be at the edge of the activities. It's best to be on the side where the canal is if you are a camera buff (sun angle). There are lots of vendors nearby selling cheese and many other things. After you are done with the market, the town has some interesting sites to see too.
