There's always something to do in Bairro Alto, and after two months in Lisbon I never got bored of it. By day, poke around bizarre antique shops full of everything you never knew you needed. Head to a restaurant for dinner (any kind of food you happen to be craving), and then to one of Bairro Alto's dozens of bars. The Erasmus Quarter is the cheapest bar area, but this is Lisbon and nothing's priced exorbitantly. The bars tend to be small, so spill out onto the street with your drink (it's legal) and meet people from all over the world, as well as locals. If you can remember the night, you'll certainly come home with a story or two from it.
