We stayed here for a few days at end May/early June 2013. Other reviewers have said it all already, so whatever I write is going to be mostly repetition.
First of all the location. The hotel is very conveniently situated for everything. First impression, arriving on foot from the pedestrianised part of the old town, was perhaps a little disappointing: the street looks a little run-down and has some traffic, though not too much. But fear not! Less than half a minute's walk and you're in the heart of the old town; or in the beautiful and peaceful square with its strange Ayios Nikolaos church equipped with both Orthodox belfry and a minaret; or in two minutes you're down at the port.
The design of the hotel is lovely, with its inner courtyard where breakfast is served (more about breakfast later!) and where you can just sit in peace at other times of the day. Our room was very nice, we had a small veranda facing onto the courtyard, with steps leading down to it. And of course everything spotlessly clean.
Service: well it doesn't really feel like "service"at all, you feel you're an honoured guest of the family. Very very friendly.
And the breakfast. I don't remember seeing any other hotel on TripAdvisor where ALL the reviews mention the breakfast! It just keeps coming, is delicious, and kept us going comfortably until the evening. After the first two days we learned to say "no" to a few of the things on offer to avoid that slightly-too-full feeling.
So, on our next trip to Chania, whenever that might be, we'll certainly be staying at the Splanzia.
