We were wondering the streets of Valletta and found this little hole in the wall wine bar with only three tables, where the owner was also serving as the host, the chef, and the waiter. He took our custom orders and prepared everything from scratch in his small kitchen, which was located under a winding staircase leading to the basement. He had a dumb vallet, which delivered the food upstairs to the dining room when he was finished preparing it. He would quickly run upstairs, get the food from the dumb vallet window and serve it to his guests! My risotto with truffle oil was delicious and so was the house wine. If you are ever in Valletta, please find Omerta Trattoria and Wine Bar on Old Bakery Street. You will not regret it.
