“Wow...what a great gastronomical experience”

Marz and Sohns swept me off my feet like a blushing bride on her honeymoon...except I'm a guy and none of the other stuff applies to me. My point is that the minute I walked in the door my wife and I were met with handshakes and a big smile. I felt like I was walking into my friend's house for the first time - they made sure to take care of my every need. Note to the reader - you have to push the doorbell in the upper right hand corner to gain entry.

When I went, my wife and I decided to go big or go home!! We did the maximum tasting menu with the wine pairing. I started with a jacket, but after five hours of eating, drinking and taking in this full experience - my jacket came off and my shirt unbuttoned a button. The food is just amazing and the presentation is such a fun experience. As with all of tasting menus, you have an idea of what you are going to eat, but as the night wears on you forget and its a new experience with every dish.

I don't want to spoil the experience as it is so much fun to just sit back, relax and enjoy these professionals at work. If you have the opportunity to go outside the city (simple taxi ride), then make a reservation and get there - this place is worth the trip and the money!!

“Perfect for our wedding anniversary”

Hidden away from the city center, along a quite anonymous street, it was amazing to pass the little front door and disappear into this world of excellent food. We got a very romantic table in the back yard with open sky, surrounded by candles and waterfall! We chose the 6 course menu with the wine package and was astonished - this is food art! Very good service - everything tasted and looked amazing. All in all a restaurant visit I will remember for a long time.

“Far better than excellent”

Having visited Mraz in 2012 and 2013, I would not have hesitated to recommend it for the fun factor, theatrics and amazing food styling and innovation, but I still had reservations about the service and the tastiness of some of the dishes. These reservations were conclusively put to rest on our recent visit.

In terms of taste, quality, overall experience, wine and service, this was simply one of the best meals I have ever had. Even if you need to budget around EUR 140 a head for a 6-course meal with wine flight (actually around 14 courses served) with aperitif, coffee, cover charge etc, I have to wonder how they can provide such quality and still stay profitable. Every detail of the food was executed impeccably with expensive and interesting ingredients and combinations, the wines surpassed any expectations I would ever have in this price range, and the now abundant service team were all extremely knowledgeable about every tiny aspect of the dishes and showed immense pride and enthusiasm in their jobs.

My heart sank a little when the first treat came in the form of a nut and seed cracker, as this seems to be the default Viennese greeting and usually tastes of nothing. However, this specimen was very crunchy and bursting with pumpkin seed flavour. The six “greetings from the kitchen” which followed not only showed off what Mraz does best – fun, theatrical, stylish modernist ideas – but were also an explosion of tastes and textures. The highlight for me was a Bloody Mary encased in a wafer thin dark chocolate shell resting on a sliver of crispy chicken skin with an avocado puree. Also very tasty was the tiny new baked potato with smoky pickled fish and horseradish cream served on hot coals. Two “candles” were placed on the table and lit. These were made of dripping, a neat idea that didn’t really work, as the staff extinguished them so that they partly resolidified before we were invited to taste them. They also contained copious amounts of salty, hard Austrian bacon which had been burnt by the wick – not nice, but the only slip of the evening. I got the feeling that this was a new addition and that, with a bit of tweaking, this would be much better.

After almost an hour of pre-starters, with the aperitif long consumed (the Rose Champagne was the best of the three sparkling wines we tried, the Cava the cheapest), we were eager to get started on the menu. The first course of bison steak tartare with slivers of frozen sea urchin was good, but the wine pairing made it even better. An outstanding Ladoucette Pouilly Fume 2008 lifted the dish and played off the different accents, from the almost creamy bison tartare to the not-too-acidic gherkin. I wasn’t a fan of the next wine – an organic, German, sulphite-free number – but again it transformed the already tasty variation of crayfish and asparagus with Japanese noodles (some soft, some deep-fried to create a prawn cracker texture), served with a ham jus.

The fish and meat courses which came next were exceptional. A tentacled-looking stingray was served on pea puree with fresh, shelled peas and hints of chamomile and bergamot orange. It was light but filling and again with a perfect balance of textures and flavours. The next dish of “OX&OX” was my favourite, sirloin and cheek with a great jus and different leeks and shallots (crispy, braised etc.) – meltingly unctuous. I don’t recall the red wine which was served with this dish, but it was ingeniously paired with a red that was not thick or heavy at all, allowing the very robust dish to shine in all its glory.

If you need a break from this overly long review, I sympathise. Before the cheese and dessert courses, we took a cigarette break in the restaurant’s charming courtyard (smoke-haters beware, inside is non-smoking, but outside you can smoke and it’s quite enclosed, so maybe a table inside would be better for you in summer).

On to the cheese... The cheese course at Mraz is an unsurpassable masterpiece and was the reason why we chose the 6-course menu (I’m always too full on the 9-course menu to enjoy this course and it’s not included on the 4-course menu). A cheese trolley abounding with perfectly ripe delicacies (including around 6 or 7 oozing cheeses, mostly hidden in drawers) would, on its own be enough to save space for this. The bread trolley of home-made bread – highlights this time were porcini, fantastically light gluten-free nut/seed bread, tomato, onion and the fluffiest roasted garlic pillow you can imagine – along with home-made cocoa or honey bread sticks, is also not the only reason to wait for this treat. In addition, diners are presented with little dishes of truffle honey (not too sweet), pesto, apricot, giant soaked sultanas, olives and the most wonderful nuts. Just because they need to be over-the-top in everything they do, the wine pairing brings a red, a robust white and a subtly sweet dessert wine with the cheese course (yes, all 3 at once!), so that you can match to the different cheeses you choose.

Quite tipsy after all of these wines, I was somewhat anxious about the “Whisky Flight” dessert. Don’t be. It is a virtuoso creation of the ‘flavours of whisky’ including tonka bean, coconut and chocolate. The heart of the dish was a light-but-not-airy dark chocolate sponge (tasted like good, old-fashioned steamed chocolate pudding, but with a completely different texture) with ice-cream and lots of other tiny, intriguing treats. This was served with a 20-year old Austrian dessert wine with Tokay flavours, and the Sommelier was delighted to explain how special it was due to the very cold winter that year.

I never thought I would have a wine pairing to match Le Gavroche in London, but this meal exceeded it, not only because the food was excellent alone but transformed to a different level by the wines, but because the Sommelier was simply the best. Immense pride in his work, engaging conversation in what works, why, where it comes from, all without the slightest hint of snobbery – his excitement was palpable and completely accessible. I’m always happy with a simple Austrian wine pairing like at Sacher where you have well-matched, tasty Austrian wines you can buy in the supermarket for EUR 9-15 a bottle, but the care here transformed the evening (which would have been great anyway). This was yet another sign of doing much more than is needed to make guests happy – with apparently no concern about profit margins – to give you the most amazing experience possible.

After somewhat dodgy service in 2012/early 2013 with just a few people working, it has improved so much that it ranks among the very, very best in Vienna. Every single staff member was helpful, knowledgeable down to the tiniest details of the dishes, and seemed to be having a great time. It’s lovely to have a meal in an atmosphere where everyone is so proud of what they are doing and wants you to have the best evening ever.

We rounded off the meal after about four hours with an excellent espresso with coconut truffle, nut brittle and candied orange peel. One last surprise was in store: a modernist take on the classic Austrian apricot dumpling. A creamy concoction was dispensed from an isi gourmet whip into dry ice and topped with apricot puree to make a cold, crunchy morsel.

To achieve these heights and refinement in a small, family-run restaurant which is constantly pushing the boundaries, adopting new ideas and changing the whole menu (and often all of the crockery) on a regular basis is simply astounding. Whether you are a modernist cuisine aficionado, oenophile, art/design lover, theatre fan, or simply someone who enjoys good food, this is most definitely the place to be.

“excellent since years”

15 years ago this restaurant was just a secret insiders place known for extremly creative cooking, excellent wine accompany and a outstanding cheese bord. Still it is at highest level. It takes 4 hours to enjoy a six course menue which is in fact 10 or more courses because of amuse geules, greetings from kitchen, and other small surprises. The service is flexible and respects individual wishes. Interchanging of courses from menue card isn´t a problem. The Sommeliér service is also excellent and the wine accompany absolute recommendable. The cheese sortiment is a must (50 soft and hard cheeses, well aged from cow, sheep and goat) come along with fancy daily fresh made assorted creative breads and truffled honey, chutneys, nuts.
If possible it is recommended to do a guided tour into the wine cellars with vaulted ceiling and a tremendous collection of national and international wines, for sur more than 2000 bottles are stored there. A paradise for wine connaiseurs.
In summer there is a small outside court with cosy corners and some tables.
Overall this restaurant is not in a fanciest corners of Vienna but one of the three top culinaric adressses in Vienna, for sure. But it is not recommended for fast food eaters and lovers of overfilled plates. And it has its price!

“Gastronomic orgasm”

The best meal I have ever head! I am a huge fan of food, food critic and this was very pleasant dinner. Service was great from the very beginning, food incredible and the whole place has a special atmosphere. Be sure to come in a good mood and ready to enjoy gastronomic orgasm.
I was dreaming to come back to this place since my first visit and will definitely come back again. Price is higher but it is worthy!
