Quite a surprise to find a very sophisticated chef with an excellent menu at the edge of the small hill town of Calcata. Most of the ingredients come from local farms and therefore couldn't be fresher or better quality. Even the cheese on the house anti-pasta plate was made locally and was astonishing. From beginning to end, this meal surprised and delighted us with inventive interpretations of traditional Italian dishes. The staff was warm and welcoming. Altogether an unforgettable experience.
