The "taverna dello spagna" in a mostly-vegetarian reataurant located close to the old city main square where the "maz de paz" risto-pub was once located. The place is obviously "new-age" with an indian-ish look, service is very friendly and cleanliness is evident. From the menu it's clear that this reastaurant was designed to cater for vegetarians - with the personnel boasting that they make their own "tofu" and "seitan" - however for "normal" people some traditional spoleto dishes are also present in the list as well.
We had "antipasti vegetariani" (mixed appetizers) followed by "Seitan" (with mushrooms and cooked parmesan-eggplant-style); the appetizer was surprisingly tasty with a good selection of variously cooked and spiced vegetables presenting wide array of tastes in yout mouth, while the seitan-based main course was a bit disappointing (even if they were beautifully cooked). The main problem with this kind of dishes is due to the fact that the soy is almost tasteless so when - for instance - you eat "seitan with mushrooms" you are actually tasting only the accompanying mushrooms, giving a feeling that something is missing somewhere in the plate. Anyway the portions are large enough to satisfy even the hungriest customer and the price (while I won't say is a bargain) is still largely reasonable.
