We first came here a few years ago with French friends and the incredibly high standards have been maintained. Eight of us this time. This is a very special place. I would recommend that you stay if you can rather than just come for dinner as breakfast is also quite superb plus after such amazing dinner you really won't want to travel anywhere apart from your extremely comfortable bed. This is a "must" for anyone interested in food. Words fail me to describe the dinner we had - it was a wonderful gastronomic journey!
It is not often we say that everything was perfect but we can say this about this hotel.
In addition, the views are stunning, lovely rooms with private terrace [again views of the valley], interesting gardens with indigenous planting [lots of herbs incorporated]

Ultra modern hotel stylishly integrated into the beautiful surroundings, our room had the most stunning views over the valley and a large terrace to sit out on! The bed was possibly the most comfortable I and my wife have ever slept in! The room service was exceptional especially the delightful maid serving breakfast in our room. A fitting place to complement the equally stunning restaurant.

It is not often that you walk into a hotel and go "wow" but this was one of those hotels. Beautiful modern almost zen like modern rooms with amazing alpine like views. A special place. Then when you are ready for a truly special meal go to the dining room and get ready to eat some amazing food.

Room Tip: All rooms have fantastic viewpoints.

This hotel, associated with a three star MIchelin restaurant is located on the top of a high hill with a panoramic view of the surrounding countryside. It has been carefully designed to meld into its environment. Each room has an end glass wall that opens up to a small patio surrounded by wild flowers and lavender. The premises have everything you would want. I borrowed a bicycle and went for a ride. There are hiking trails nearby and even a small ski hill for the winter about a kilometer away. The rooms are modern with every modern amnenity with a glass wall between the bathroom and bedroom. While everyone comes for the food, the accomodation is worth a visit as well.

For a start, I was not expecting how utterly beautiful the Aubrac would ultimately be. As an American, it's just not a part of France we hear very much about. I'm not sad, because it's hardly overrun with tourists and a bit of a drive to reach. But it was stunning.

So were both our dinner and stay at Michel Bras. It's not an exaggeration to say this was one of my most anticipated and also my most enjoyed dining experiences ever. I've been trying to make it here for over 3 years and am so thrilled to have finally experience the Bras' family's food and hospitality. From the aperitif in the lounge/sunroom area to the incredible tasting menu and wine pairing, the entire meal was truly incredible. Followed up with in-room breakfast the next morning overlooking the gorgeous countryside around Laguiole in our lovely room at the Maison, I really can't recommend Bras enough. Oh and the Garguillou is not only insanely beautiful but also absolutely delicious.

What a setting, on a hill overlooking the rolling hills of the Aubrac ! Just a 5min drive from Laguiole. Our room, Suite No. 3, matched the breathtaking view. Living room with a view, huge bathroom with sep. shower, bedroom and the dressing. All modern and spacious. So what happen that it is not 5 stars ? Just small things, I was wondering why we had in the bathroom only one wall-mounted bottle of gel to fit the body and hair, what ever happen to body lotion and the other amenities ?
The rooms are generously spread to maintain comfortable the privacy and the main building had in the Bar and the Restaurant stunning views as well. Gosh, am I picky ?
Dinner was excellent, 7 courses for € 125.00, all well presented and tasteful. Just not all waiters seem to have enough experience ( must be trainees ) and could not answer the cheese question but attentive. We were allowed to have a glimpse into the kitchen during the dinner preparation, impressive the coordination. We enjoyed the dinner.
Breakfast with €29.00 was compared to all the other experience the disappointment. We did ask for Cappuccino and were told, sorry not possible. ??? No question if we like an egg or anything else beside the buffet, which had cheese, sausage to cut, jam. Poor for the cost.
That is the reason for only 4 in the rating.
Overall, it is a great place and perfect to escape from the world.

After an amazingly beautiful 4 hours drive from Lyon thru one of the most remote but stunning region of France, we finally arrived at the hotel. The sun was just about to set when we were shown our rooms. The rooms have been refurbished 4 years ago. There are only 13 rooms all facing the most beautiful view or the Aubrac valley. The rooms are simple, very modern, lots of wood and granite which goes perfectly with the region, great bathroom and a massive window overlooking personal outside space and THAT view. The rooms are around the 330 euro mark which is not that outrageous for that kind of hotels. You feel like you are in a really special place. Worth a mention (see pictures) whoever did their garden is a magician. There are beautiful, amazing local plants and flowers which are framing perfectly this very interesting construction. The hotel is very modern, built in 1992. We asked for a bottle of wine to be brought to the room so we could enjoy the sun set. This could not be done because they do not transport the wine list to the rooms so you have to go to reception. This is just ridiculous. I understand that the wine book is far too precious to be left in the room but in that case create a small wine list for room service; you expect that in that kind of hotel. Anyway, we got it ourselves and had the most incredible sunset.

Onto the restaurant, you first go to the bar which is the great extension overlooking the valley. Unfortunately it is stuck in 1992 and now looks like an airport lounge. The seats are comfortable but ugly, the coffee table have horrid dry flowers under a glass top, you have old window cabinets showing bad local pottery, etc such a shame, the floor is very bad ceramic looks like an hospital, and its cold. This feeling of being stuck 20 years ago goes on in the restaurant, horrible table cloth which are around the table like mattress covers, flowers are bad (weird after having seen such beautiful gardens) lilies and dahlias when you expect beautiful local plants, the plates look like Conran shop circa 1992. The front door is a revolving door with weird artwork everywhere. .. All of this needs to change asap. They don’t need to do much but warm up the bar (we went there after dinner and stayed for about 10 minutes as it was soulless and cold, its silly as they could make money by people staying there and having after dinner drinks) change the tablecloths, new flowers, put a few carpets down, etc

Onto to the food, we chose the main degustation menu at 191 euro, which for a 3 star Michelin restaurant is not bad.
We had wonderful pre -tarters at the bar especially an half boiled egg out of this world! Started with Bras’ famous vegetables and flowers salad which was ok, my problem with flowers is that some of them are actually quite bitter. The following two dishes were STUNNING, lobster with honey and then foie gras, seriously good. The rest was ok, desert were amusing not amazing. Service was superb, our waiter was very friendly and the sommelier was very helpful in finding good wines at a reasonable price.

It’s a bit of a difficult one as I want to recommend this place just for the location and the experience of being there BUT they need to update their restaurant quickly as its getting dated every day more and more (this is always the problem with modern built) make that bar the cocoon that its should be , etc. Food wise it was not the most incredible dinner ever, they still deserve 3 stars but they have to be careful as you end with mixed feeling at the end. (Beautiful breakfast by the way, despite the awful burgundy table clothes!!)

Finally we asked reception the next morning the best place to buy knives ( as you do in Laguiole) and we were told to go to the Forge, turns out this is the only one closed on a Sunday, something they should know and advice you on!!
