“Gastronomic experience”

We opted for a one and a half hour demonstration in the kitchen with Chef Denis before the dinner which was really enlightening. He does speak French with very little English so need to understand French. The 24 courses were really unique and molecular cooking at it's best.

“Molecular cooking experience”

This restaurant is actually an experience in molecular cooking, where the cooks and kitchen work almost like a chemistry laboratory, to discover the effect on foods of different treatments, temperatures, etc. There are 2 menus, a 9 course menu and a 22 course menu. They are very, very expensive but the price reflects the immense amount of research, testing and incredibly meticulous work involved in preparation, as well as the highly unusual presentation and the item-by-item explanation by the wait-staff. An example of a "dish" (bite-sized portions):- you may get a dish which looks like a tiny multicoloured macaroon, but tastes and smells like Peking Duck, but is made of algae and other vegetarian ingredients. Or you may get a dessert that is popped out of a balloon, along with liquid nitrogen. Or carrier pigeon cooked and served in a real, honest-to-goodness old-fashioned aerogramme. This is not like going out to eat (though you will be stuffed by the last course), but more like going on a 5-senses experience trip - very intellectual, very surprising. If you can afford it, do it once in your life.

“Just love to come back”

It is expensive, but for a gourmet, you have to eat here. The concept is unique, the flavours so divers and concentrated, the food so delicious...every dish leaves you with wanting more of it...if you imagine the work, the testing, the preparation,..to achieve such a delicious result, it cost money.
Well done Chef! We will be back!

“Expect unexpected”

First of all, this is NOT a restaurant! This is an EXPERIENCE LAB!
To compare this place to a restaurant would be like comparing normal circus to Cirque du Soleil.
One menu, 22 courses, single price (well, expect 5x what you would pay for a very good steak)
But have you ever eaten cookies frozen in a liquid nitrogen, or "nothing"?
We spend a whole evening there and had a very good time.

“Exceptional experience”

22 courses, several theatrical episodes of presentation, a tour of the kitchen and laboratory and a warm greeting from the man himself. I will not comment on price as we were guests. Suffice it to say that if cost is an issue don't go!

To say much more would spoil the surprise element. Everyone should go once in their life.
