Located in the pedestrian area of Vevey's old town, this place only has a few tables, but they do take reservations. The selection is relatively small and you have to wait a little as the dishes really are made to order, but the fish is impeccably fresh and precisely cut, presentation is artful - everything comes on different coloured and textured plates in true Japanese style.
And if you've kept room for pudding, there's green tea or sesame ice cream.
Not cheap but value for money. Last but not least service is friendly and helpful.
