We were here just before Christmas and eat in the E Sushi Restaurant on the 4th Level - The Bar is in the same large room and this afforded us division 1 People watching - It is aimed at the uber trendy smart office crew and has a local handle where they call it "The Dry Cleaners" (Because this is where you go to pick up a suit!) - That been said, the service was very friendly and quick - After a few cocktails we moved into the Restaurant - Japanese with lots of dishes other than the usual Sushi and great staff who were very attentive. Pricy but then Sydney itself has gone very expensive - Dinner for two was €263 (That's 4 cocktails and one bottle of wine + Dinner)

Room Tip: Decide is you want to sit at the counter and see the chefs work or at the lower tables

We arrived on Xmas day, I was vet happy with the service and rooms. The back entrance was very dodge , I started developing fears of what lay inside. Much to my pleasure it was nice. I wondered why they had ear plugs in the bathrooms....I stopped wondering the day after Xmas when I was suffering from jet lag at 2 am and also annoyed at the partying notice downstairs. I now know whet the ear plugs were for. Luckily for me, I only had one more night to endure hip hop mix and Riri all night. On the upside, the in room dining was super fast , not more than 15 mins and the food was tasty!!

I will return again , this time without the kids!!

The Establishment is a very cool hotel in a great location 10 minute walk from the Opera house. The hotel is a little dark because it's down a small street surrounded by buildings however the room was spacious and nice, the staff was great from housekeeping to the front desk, and all of the servers and bartenders. Their are 4 restaurants and bars in the hotel which are all very cool and different. From casual to white table cloth to chinese and sushi there are a multitude of resto's to choose from. If you're looking for a hip fun small boutique hotel with a great staff this is it.

We surprised my mum with a night at establishment for her 70th birthday. The staff were wonderful and welcoming, making her feel like a star.

The rooms were clean, modern and beautifully designed, i loved that they appeared to have built into a great building rather than gutting and making it look like every other hotel room in sydney. Little extras like an IPAD in the room and a turndown service make the place that little bit more special.

The location is fantastic, easy to get around but you would never even need to leave the complex! We ate at Mr Wongs and it was phenomenal. The staff at breakfast were helpful and the food was great.

A fabulous hotel I would recommend to anyone after a little sydney getaway.

Stayed again for another night in town, great service and staff were great a special mention to Richard who looked after us during our stay and also at breakfast. Location is fantastic and rooms well lokked after.

The good point about this hotel is that the staff are without exception charming and helpful and friendly.
The position is central, but it's in an alleyway with bad smells and early morning piles of vomit.
The rooms would once have been stylish. They are now tired and gloomy. The carpet was dirty and lumpy (what was under those twenty lumps?). The bed is small by hotel standards for two. The lighting system is not intuitive. The bathrooms have insufficient light and need a good deep clean and application of new silicone.
Room service food is very disappointing given the hotel's association with supposedly good restaurants. The real shock is how bad breakfast is for AUD25. A fruit salad not seen since 1973 with grapes, watermelon and melon alone. Three cereals to choose from. Some juice, and toast making facility. That's it. The benches were covered in crumbs. It feels dirty. For an extra AUD12 you can have row booked eggs (overcooked- can't even boil an egg) and 'soldiers' made from under toasted thick white slabs so karate that each soldier was twice as big as the egg. I dreaded breakfast each morning and eventually went elsewhere.

The hotel itself has very nice decor, and has clearly spent a lot of money on providing little extras for the guests(ipads in the rooms, bvulgari products). We were given a room designed for guests using wheelchairs, it had a shower that was large and leaky, not ideal. We asked for a regular room and they were unable to provide one. We ordered some room service, the food was much better then most room service. We then opted for breakfast using the order form you hang on the door. When we woke up after the food was about 20 minutes late, we called about it they said they were busy it would be another 20 minutes. As we were checking out this obviously didnt work. We had to cancel our order and start our travels starving, having not prepared anything assuming their breakfast system worked. We received no apology let alone compensation for our troubles which doesn't exactly match the obvious higher up attempts at providing a first class stay.
The walls are very very thin (might as well be curtains) and the lights buzz. They provide earplugs.
