Currently in the process of booking accommodation @ The Establishment Hotel and couldn't go past our first touch point, our booking assistant Meg Wanna! Not only was she professional with through product knowledgebase her thoughtfulness in accommodating our two young children came naturally. A credit to her employer @ The Establishment Hotel

Nice Masterchef style dining, great food, good service, quality food, nice location, very central, easily accessible, great wines, nice pub at ground floor, open most hours, always full of people with great buzz around

We were VERY pleased with our stay at Establishment. You enter via cobbled stone lane way and step into a discreet and stylish lobby where staff are warm and quick to help. The rooms are remarkably spacious for a city hotel and are appointed with quality finishings, my favorites being the Bulgari bath products, organic activated nuts in the minibar and Leonard Cohen pre-loaded on the in-room iPad.
Connected to Establishment Hotel are some of the hottest restaurants and bars in town such as Mr Wongs, Est, Palmer & co to name a few. This is a plus as the concierge at Establishment will do their best to squeeze you onto some of those lists and tables that are usually inaccessible with short notice.
While the hotel does not have views, it is a seven minute walk to Circular Quay where you look right onto the Opera house and harbor bridge. The first morning of our stay I rose and took a run along the water and through the botanical gardens.
I recommend this hotel for discerning guests who appreciate retrained style and privacy.

Stayed here with my husband for 1 night on a weekend. Booked for an Establishment Room package including a dinner at Est but after a warm greeting was pleasantly surprised to be upgraded to the Penthouse. (scroll to end for summary)

ARRIVAL: Thankfully the cab driver knew how to get to the hotel, but the hotel website provides a great little map to show where the entrance is. Small lobby tucked away, manned by a young lady who was very warm, pleasant and very helpful.

ROOM: Well, what can you say about the Penthouse? Stylishly decadent (if a bit worn). Music playing as you enter. Tea and biscuits provided (loved it). 2-storey room with bed/bath downstairs and reading area upstairs. Massive marble bathroom with a deep spa bath smack bang in the middle (a few of the metal rings around the jets had come loose, but other than that was working fine). Loved the Bulgari toiletries. Big bed set out with excellent sheets (must have bumped my shins at least 5 times on the protruding edge of the bed, my own fault I know). Reading area upstairs with lounge was very classy and well set out but felt a bit superfluous for us (but perhaps the perfect place to sit with someone you've invited back to your room... might as well use it, right?). Windows look out onto other buildings, which feels like a small point considering how nice the interior looks and knowing the location, but may be a disadvantage when comparing with other hotels in Sydney.

SURROUNDS: Excellent location for getting around Sydney. Lots of great (but not cheap) restaurants around the area and within the hotel. Have eaten at Est as part of the package (excellent service, fantastic food) and Sushi e (best sashimi I've had in my life). Bar and club downstairs good for a cocktail. The party goes on till late, and I can attest that even in the Penthouse you will be able to hear the "doof doof" until 3 am on the weekends (hence the provided earplugs, although this may conflict with hearing your alarm in the morning to catch your flight). But if you've read the other reviews, you know this and can't say you weren't warned. Can be a bit of a maze making it back and forth from your room to the various restaurants, and the elevators are shared by staff and guests (occasionally the elevator back doors opened onto random service areas, must have gotten in at the wrong time).

BREAKFAST: Downstairs in the Gin Garden. Small but decent set up. Absolutely loved the room set up with the glass ceiling and the greenhouse feel (some of plants looked like they needed watering, but I can imagine it's not easy to upkeep). Loved the selection of breads (when you can have brioche for your morning toast, it always feels a little luxurious). Hot breakfast meals costed extra, small point for me (not usually a huge breakfast person) but may make a difference for others.

SUMMARY:
They've done an impressive job of making a little building feel like a hidden boutique gem in the middle of Sydney, noting that you are paying a lot for the experience, perhaps lending it the feel of being part of an exclusive club. The decor is well set out, if a bit worn round the edges and the exclusive atmosphere and excellent service definitely fits with the boutique feel.
Is it worth the $$$ ($1050/night for the Penthouse and $400-$450/night for the Studio and Establishment rooms on a weekend night)? Not so sure for the Penthouse (it was lovely but we had the option to book a 70 sqm room with balcony access looking over the harbour for just ~$100 more at a different hotel, albeit not a 2-storey room). But if you're a heavy sleeper and don't mind the "doof doof" which starts at midnight (just have an extra glass or 2 of wine, you'll be fine), you might consider the other rooms, especially if you're considering going to one of the lovely restaurants next door.

If you've read the reviews, you know that everyone talks about the noise and the price, so go into it with a bit of forethought, consider the extra cocktail and you might actually have a good weekend!

Room Tip: Higher floors might dampen the noise, but definitely doesn't get rid of it completely.

We stayed here for Valentine's Day this year. The room was delightful and tastefully appointed. If you are after a view, this is not the place for you. The meal at EST fabulous and buffet breakfast the next morning in what was the bar the night before a lovely setting.

Room Tip: Somewhere to taste the delights of a world renowned chef, and to fall in to bed afterward. Ask for a...

A slightly belated review of this impressive city centre boutique hotel. When stayed here when we came to see the British Lions tour. We drove from Melbourne; do not rely on SatNav when you hit Sydney as the hotel is tucked between two main streets in Sydney and the SatNav failed to fine the entrance given all the tall buildings. However, the several circuits that we took around the hotel were worth it. Situated in the perfect location to explore Sydney Harbour and the Rocks and yet being tucked away you are able to get away from crowds very quickly. The downside for non city dwellers (we live in central London) is that you will be exposed sydney waking up (trucks etc) but then we Iike this. The staff in the hotel are amongst the most genuinely friendly hotel staff I have ever met - why can't more people be this way. The room we stayed in was generous, contemporary and had a fantastic bathroom with walk in shower and stand-alone bath. We availed ourselves of room service breakfast which was very good. Not cheap but a very enjoyable stay.

There is a lot to like: reception staff are much friendlier and more helpful than most; the decor is still stylish if a bit worn; the location is great; and, you can get a reservation at Mr Wong (not otherwise available). (We didn't try the hotel breakfast having read poor reviews.)
The less likeable stuff? The weird crumbling sub floor under the carpeted areas - this needs attention. We were awoken at 3am by the goings on in an adjacent room - a bit unsettling, can see why we should have used the ear plugs provided.
But, on balance, would stay here again.

Room Tip: Upper levels may ensure freedom from street noise but not necessarily freedom from adjacent room noi...
