What a brilliant surprise. This small Japanese Ramen shop located at Eating World in Sydney's China town is an absolute gem.

The Menu items 1 and 2 Roast and and BBQ Pork Tonkotsu Ramen with egg is mind blowing. Never had such a gastronomic experience in any Japanese restaurant anywhere. The Tonkotsu pork broth takes a week to make from pork bones and miso and is thick with the most unbelievable great flavour... WOW The Wheat noodles are perfectly cooked to al dente standards...

And this is from a tiny fast food outlet in an Asian food area called Eating World. Cost is $15 if you include a spiced egg. 1 bowl is a very filling dish.

Thick soup with delicious ramen & pork belly & that EGG!!! To die for. Get in line early otherwise they sell out. The giant pork rib wasn't worth the $25 price tag. Get the other thick soup ramen. They are all excellent. If you add more noodles and a spicy ball, you can share with 2 people without a problem. I wish this was in the US so I can go all the time.

Great place hidden in the corner of a food court in Chinatown. Very basic setting, but the Ramen is the best!

Really good stock and they will adapt the taste to suit your preferences. But very tasty and the noodles and other ingredients were top notch too. Run by Japanese staff who clearly have a passion for what they cook, and it shows. Can't wait to go back.

Don't let the busy/basic food court setting put you off, and don't be fooled by the ramshackle counter. The Ramen is great - and a steal.

Tucked in the corner of a food court in Chinatown, this hidden gem will surprise many with its delectable thick broth.

I suppose the choice of its location allows the store to drive down its prices as the quality of their food can easily justify a hike.

The crowd in the food court seemed to be drawn to this unassuming store as I had to wait for around 15 mins (worth the wait!).

I ordered the simple Tonkotsu Ramen which is also their specialty.

The thick broth was surprisingly smooth and makes you crave for more!

There are a lot of absurd things about Gumshara:
It's a Japanese ramen place in Chinatown.
It's the best and most authentic ramen place in Sydney and it's in a food court (thus, not a "restaurant" as described above).
And the thickness of their tonkotsu soup - so thick it feels like you're consuming a liquified version of pork.

All absurd, true, and completely acceptable.
If you want a stick-to-your-ribs meal with a Japanese twist, this is the place to be.
Thick hearty soup with that delicious fatty coating on your lips. Good noodles. Excellent pork. And it has the tick of approval from Japan-dwellers as incredibly close to being 'back home'.
This is the perfect winter's meal. Not to say that I haven't been during summer...several times...but I do vouch this as the best the city has to offer. I can't even begin to describe. My mouth is watering as I type.
