I recently visited "Goose Down" (Gesi Puch) to have lunch. I saw on the menu one of my most favorite ingredients, fresh goose liver, served with salad, and had to have it. Unfortunately I did not ask the waitress to just sear it. So I got grossly overcooked goose liver that was rendered almost tasteless. Its texture was the texture of clay after a spell of dry weather. In other words, complete disaster! The only saving element was the decor of the restaurant, which is quite nice compared to the quality of the food. What a shame to destroy such a fantastic ingredient!!!
