My parents, my siblings and I went to Hostal El Rintintin for Christmas last year. The casa is perfectly located within Trinidad - close to all the popular restaurants, the big music hall, and an easy walk to everything else!
Mariela and Lorenzo are very gracious and attentive hosts. They always made sure we had what we needed, arranged all transportation and any activities we were interested in (horseback riding, getting to the beach, etc.). They do prefer to cook for you, but it is worth it, as they make delicious food! The breakfast was always something to look forward to in the morning. Sometimes they will also arrange entertainment on the rooftop patio (a very relaxing place!) while you eat dinner.
There is an excellent restaurant near by called 'Wakey, Wakey, Shakey, Shakey.' The owners are very personable and happy to host you. Trinidad is generally a quiet town, but music and people are active in the streets well into the night.
The only suggestion I would make is to bring your own pillow or sleeping bag if possible. The beds are a bit uncomfortable.
I would definitely recommend Hostal El Rintintin to anyone planning a trip to Trinidad!
