“Love this place!”

Got taken to spring cafe by a friend and really loved it. I clean comfortable but not ostentatious atmosphere is coupled with well prepared delicious organic vegetarian food. Great shakes and it's right in the heart of Aspen so easy to get too, loved it!

“AMAZING!”

My daughter said "If all tofu tasted this good I would eat tofu every day!" We come to Aspen a few times a year to visit family and are usually starved for healthy food. But now Spring Cafe has opened up along with a couple other places- and we can have a healthy happy vacation 3 meals a day! We recognized club salad and tofu and veggies as being identical to the dishes that used to be served in the Explore Bistro- and then we peeked in the kitchen and saw it was indeed the cook from the old Bistro which closed down a few years ago. We are happy to have those classics back! The black bean soup and corn muffin, the chocolate coconut macaroons. We also recognized some menu items from Real Food Daily- such as the tempeh ruben…they have picked the best of the best of fave veggie dishes. We love the decor - clean, simple, modern- lots of day light. Smoothies and juice are yummy too.

“Finally!!”

This is hands down my favorite place in Aspen for extremely high quality, healthy, clean food - everything is organic! The cold-pressed juices remind me of my time in uber-health conscious LA....try the Power Greens if your a regular green juice drinker or the Green Light if you're a newbie. Definitely go for the Huevos Rancheros in the AM...so addicting! Or try the vegan oatmeal pancakes if you're in the mood for sweet. Also love the baked goods! Try the banana nut muffin, pumpkin bread and tofu cheesecake (and I hate tofu) with any of their yummy coffee drinks. The smoothies and shakes are great too especially for an easy breakfast or filling but light afternoon snack...I've only had the Cacao Shake (great for a chocolate fix) and the Spring Shake - both great. While it may be slightly more expensive than your average run of the mill lunch spot in Aspen...it's the ONLY place to get real nutritious food that you can feel good about consuming. So thankful we FINALLY have you in Aspen, Spring Cafe!

“Need to get your act together!”

I had high hopes for this restaurant and it has been a bust! Very expensive and the service is terrible. The food is only so-so. What are they thinking? There is such a niche for this kind of restaurant in Aspen and they are blowing it. I don't get it. The atmosphere is nice but the staff is stressed out (huh, like Aspen is so tough?). The owners are from NYC and should know better. They better get their act together ASAP or they'll be off the list.

“Too pricey”

Love the food. Love the mostly vegan menu choices. Service has been rocky since they opened but does seem to be slowly improving. If the windows/doors to the patio are not open, the place is painfully, obnoxiously loud. But it's really just too expensive. The coconut tofu bites are divine but $11 for five small cubes of tofu? Likewise, the stuffed mushrooms I enjoyed today: wonderful. But $12 for five small mushroom caps? Look, I know this is Aspen but for a counter service cafe, this is just too pricey.
