When we're in the mood for some superlative oysters, we head to Apalachicola. We don't bother with the fancy schmancy oyster dishes down the street. We go where the locals go, and that's Papa Joe's. Now the Apalachicola oyster industry is hurting from the water issues with water in the local river being diverted upstream in Atlanta. So you're no longer guaranteed of getting your fill of succulent oysters. But, when they have them (be sure to check ahead of time), they're days fresher than even in Panama City. (Those come from Apalachicola too.) They're fatter, and moisture - like right off the boat. It doesn't get better.
I've seen people fly in from Columbus, GA and take back coolers full of those famous oysters. My son had them shipped to Texas for his wedding.
A couple of times I've been to Boss Oyster on Sunday when Papa Joe's is closed, and once they had no oysters, and both times charged way high prices for what they had. However, we've never been disappointed at Papa Joes. (Getting hungry thinking about them!)
