We stayed in Palais Amani for 1 week in March 2012. The outdoor areas of the Riad are beautiful, with 2 roof terraces and a courtyard garden, all with plenty of relaxing seating areas. It is a very peaceful place, and well situated within the Medina of Fes, a 5 minute walk to the main paths through the city.
The food and service were absolutely fantastic. Fresh fruit juice, fruit, yoghurts, coffee, and bread for breakfast every day, as well as a traditional cooked course (e.g. Moroccan pancakes with almond paste) which was different every day. We ate in the Riad on several evenings, as well as trying some other restaurants in Fes, and think that Palais Amani must have the best restaurant in Fes.
One of the best things about the Riad is the attention to detail and small touches that improve your stay, including: being greeted in the car park on arrival and escorted to the Riad by foot; fresh mint tea and biscuits every afternoon (and on arrival), free WiFi, chocolates and water every evening as part of the turn down service. All of the staff are very friendly and accommodating. A great place which I would highly recommend.
