Thanks for taking the time to leave a review and we're sorry to hear that the tour didn't live up to your expectations. The Cowgirl lady is considered to have the best khao kha moo (slowed cooked pork knuckle in five spice) plates in the city and though you could have gone yourself as you have said (unlike the rest of the stops on the tour which are really only known to locals), you would have never have understood the interesting history behind the dish, vendor and owner.
The soup you mention is a Northern Thai classic, nam ngiaw, a truly delicious dish made from a slow-cooked broth of pork ribs, ground pork, tomatoes,Thai spices, herbs and a few very small cubes of Thai blood jelly topping rice noodles and served with huge bunches of Thai herbs and pork crackling. You also didn't mention the other delicacies you will have tried like smoky grilled sai oua sausage with lemongrass and spices from a vendor who sells more than 5000 a day to locals, the different types of nam prik dips that you can watch being pounded in large pestle and mortars, the miang kham made from betal leaves filled with an explosion of flavour coming from ginger, dried shrimps, garlic, peanuts and slightly sweet sauce, the different types of tea and tamarind leaf salads which tells the story of Burmese influence centuries ago and the many other dishes and snacks on the tour.
As you will know, tastes are very subjective. As you can see, 99% of our guests enjoyed the experience and have left 5 stars, but by the sounds of your comment on delicacies, Northern Thai cuisine just wasn't for you. We're very surprised to hear your comments on your guide Moui. Again, every other review writes about her patience and knowledge of Northern Thai cuisine.
