Sharia Muizz is - in my view - the most fascinating place in Cairo. Take a day and walk all the way from Bab el Nasr to the Ibn Tulun Mosque. Your feet will be sore at the end of the day - but you will have had a unique experience. The Islamic monuments are fascinating - and have partially been beautifully restored (tickets are quite expensive - but well worthwhile). My own "highlight" is the Ibn Tulun Mosque. Walk past Khan-el-Khalili - it's a very touristy place. For beautiful carpets and wall-hangings - go past Bab Zuweyla and to the "Tentmaker Bazaar".. Further on - just enjoy the sights and smells and friendly people: it is where Egyptians shop, eat, live...! Finally: Ibn Tulun. And the nearby Gayer-Anderson Museum. Both stupendous! Absolutely a must.
