We just happened to walk by Interludio as they were opening. The menu looked intriguing enough for us to reserve a table for later that evening. When we returned 3 hours later the best evening of our 2 weeks of Travel was waiting for us. Our 2 minute conversation earlier in the day resulted in being greeted by the entire staff as though we were old friends. The service was genuine and as good as we've had anywhere.

The food was simple and ceative, fresh and savory. Pomp and circumstance ignored in favor of creating meals that taste great and make you feel good. The ensalada de cus cus was a highlight as were the CHAMPIÑONES RELLENOS. We moved next to the SALMÓN ENCOSTRADO and RAVIOLES NEGROS. Both were just extremely tasty and satisfying.

It was one of those meals where we liked the food so much we each ordered 2 postres just so we could taste four. teh SOPA DE CHOCOLATE was the winner but all were great. So much creativity put into these finishing touches.

We headed downstairs for a drink and some performace art.

This will not scratch the tourist itch you can find in Bellavista. Its simply the place you would be a regular if you lived in Santiago.

Just go.

Everything about this place was a discovery for us. The menu is very intriguing; they use a quite uncommon mixture of ingredients - all of these with an outstanding result. The entrée was delicious - we had hummus and a beef carpaccio. The drinks were quite good and varied; not the usual place for drinks. Service was diligent and the waiters were incredibly kind. I had the crusted salmon as a main course, and I just couldn't believe the flavour! It was so good that I had to let everyone taste it! Well, we all did that, anyways, so I had the chance to taste other dishes as well. The mushroom risotto was also very nice.
Regarding dessert, I have to say that they were delicious, but after such a wonderful main course, my expectations were too high. Advice: don't ask for the chocolate soup unless you intend to share. It's too much for one person... Unless you're a chocaholic, of course.

Starting for the place, the restaurant is in the middle of one of the most beautiful neighbourhoods of Santiago. The atmosphere is great, and the place is well designed, attractive and very cool.

The food: amazing. I have been there three or four times and always is surprising with new plates and flavors.

About deserts, the mango's cheesecake is something you can't die before trying it !!

This place does not only have a great menu, with fantastic meals in it, but also it has a lot going on! There are always art exhibitions of different kinds, plays (in August you could see an 8 minute play for just one viewer) and music (on Wednesday you can listen to Ernesto Holman, amazing bass player).
The place is stylish and the service is excellent. One of my favorites!

Regular food, nothing so special.. and we had to wait 20 min for the starter and half an hour for the main dish.. way too long !
