Description: The Fish Restaurant Proto, established in 1886, is located in the heart of Dubrovnik’s historical core, at the intersection of the Široka and Vara streets. The long tradition of this popular Dubrovnik restaurant attests to its reputation and lasting quality based on its unparalleled preparation of diverse seafood and meat dishes. Proto’s gourmet menu is inspired by indigenous dishes and the culinary artistry of Dubrovnik’s distinguished citizenry, passed down from one generation to the next. Our top local chefs add a touch of contemporary culinary trends to traditional recipes. Guests are offered imaginative dishes made from fresh Adriatic fish, shellfish, crabs, and molluscs. The menu depends exclusively on the daily availability of fresh ingredients. Refined gourmet connoisseurs believe the restaurant’s lure and distinctiveness arise from the variety of seafood on offer which depends on the weather and catch. Our friendly staff is always willing to explain every detail on the menu, filet the fish for guests less skilled in deboning, and often serve as promoters of national cuisine, in particular the Mediterranean cuisine with which they are most familiar. Along with seafood, Proto offers organic vegetables with genuine, long forgotten flavours, grown in the gardens of Župa Dubrovačka, several rural homesteads in Konavle, and on the nearby islands. The authentic taste of meat specialties reflects the quality of the livestock from Dubrovnik's hinterland. The Proto Fish Restaurant's sommelier, Croatia's current champion, recommends perfect pairings of Croatian and foreign wines with fish and meat specialties. Depending on the weather, the restaurant’s specialties can be enjoyed in its cosy interior or on the terrace overlooking the throngs of visitors strolling up and down the Stradun. The Fish Restaurant Proto takes pride in its tradition and the dignitaries it has hosted, including King Edward VIII and Wallis Simpson, and many star actors, musicians and entertainers who participated in the Dubrovnik Summer Festival while staying at Dubrovnik’s luxury hotels. The Fish Restaurant Proto keeps pace with gourmet trends, continually innovating and updating its menu so as to please the tastes of its guests from all over the world who visit Dubrovnik, renowned not only for its cultural and historical heritage, but also increasingly as a top gourmet destination. From the abundance of ingredients on offer, Chef Boško Lonac selects the finest products to present the highest values of Mediterranean cuisine to our guests. The reputation of this cuisine’s flavours, considered the world’s best by many connoisseurs and backed by the impressions of Dubrovnik’s visitors, is spreading around the world unstoppably. Satisfied guests are the most important outcome of this mission, continually reaffirming the Proto’s proud tradition. Pay us a visit and see what makes us the best seafood restaurant in the Old City.

“Great food and service, somewhat expensive”
4 of 5 bubbles Reviewed 16 April 2010

We were recommended, by the staff in the Executive lounge at Hilton Imperial, to eat at this restaurant if we wanted to have very good seafood in an exclusive restaurant.

The restaurant are located near the main street in the centre of the Old town of Dubrovnik.

We got the choice to be seated outside, in the main restaurant area or in the winter garden.

Great service from we arrived the restaurant to departure.

We ordered the sea platter, one of the chefs choices. It was a good choice, perfectly prepared and delicate presentation. And not to forget: great taste.

We just ordered two glasses of croatian white wine. Croatia have several good white (and red) wines and we were not disappointed.

If you are on a budget you have a lot of other choices in/or out of the Old town.

“A jewel of a place with super fresh seafood and top service”
5 of 5 bubbles Reviewed 16 April 2010

We visited in early March - 2 adults and 3 children. Without exception, the seafood I have had in Croatia has been superb - and this place was no exception either. The seafood was bursting with flavour, the service was fantastic and so friendly. I would thoroughly recommend this place to anyone who loves good food. Our bill came to £147 for 5 of us - and we put away some lovely wine. The olive oil was absolutely to die for - so much so that we had to buy some at the airport,

“my haunt”
4 of 5 bubbles Reviewed 6 March 2010

I love croatia and i love dubrovnik. Have been back a few times and proto is a must stop for us. Fresh food, fabulous fish dishes, friendly staff. Our trip wouldn't be the same without stopping off there. On our last trip we realised while on a ferry that we got our departure date wrong and should have been at the airport. After a crazy and dangerously rushed trip to the airport, only to find our plane had already taken off, the only thing that could cheer us up was lunch in proto and a trip to lokrum island! It's not amazingly fancy but it is one of our favourite haunts!

“The perfect location!”
5 of 5 bubbles Reviewed 2 March 2010

My family and I went to Dubrovnik last summer and decided to have one of our meals at the famous Dubrovnik restaurant of Proto. Location wise, this place is perfect. It is right in the middle of the old city centre at Siroka ulica. The service was perfect as well. Our staff was really nice and the wine recommended to us by the waiter was amazing. The food was the best part. The fish we had was exquisit. It was worth every penny.

“Food is tasty but expensive”
4 of 5 bubbles Reviewed 7 January 2010

This restaurant is advertised everywhere in Dubrovnik and even outside Dubrovnik. If you have a lot of money - you can afford to enjoy food (though I can't say it's plenty or better than in other places) otherwise better find something more simple with the same choice but much cheaper. But the waiters were very friendly and caring!
