I say this with all the experience of an ignorant tourist, but Yumoto Choza felt like a taste of authentic, traditional Japan.
The entrance is tucked away at the end of a leafy path and you're greeted by dark wooden floors and a kettle fire pit to your right. All the staff were polite & friendly and did everything to make our stay as comfortable as possible. The building itself is a delicious tatami maze hiding everything from tiny rooms full of pottery to random old rocking chairs in little alcoves. Our room had two areas for sleeping, a little kettle fire pit, and a toilet (but no shower, you use the onsen) as well as having more modern touches like heating and phones.
There are both public and private onsen which are shaded by trees. I loved going in the evening when the steam billows off the dark water and creates misty halos around the lights.
In the evening in our private dining room, we were served delicate pickles, smoked fish, skewers of hida beef, mushrooms, tempura mountain plants, miso soup and more, sat around a cooking hearth. It was a really different, and very enjoyable experience.
