I stayed at the Fairmont Peace Hotel for 3 days during an executive management meeting. The hotel is a classic old hotel refurbished to its natural charm. Right across the road from the Bund, there is plenty to see at street level if you take a walk. The rooms are decent in size and the bed is amazingly comfortable, too bad I had to get up early each day. The Dragon Phoenix serves typical Chinese cuisine, nothing really great to remember although that may have been through choices....the Peking Duck looked good however I did not order. A trp to the French quarter is also a good idea.
