Being a lover of the classic Beef Wellington and having eaten the meal often, I have a definite idea of how it should be prepared.
From the moment we arrived until the moment we left, it was truly a sublime experience. The appointment of the restaurant is just beautiful; the staff were attentive and friendly and the dinner itself was just incredible.
We had a look at starters and desserts, but decided to go straight for the main dish and decide how we felt afterwards. Good decision. We were brought 3 different types of freshly baked rolls with accompanied by a creamed, unsalted butter. All delicious. We were then served a variety of amusee bouche including a teacup of hot, spicy soup - again, all delicious.
The Beef Wellington, accompanied by crisp, fresh vegetables and little jacket potatoes, was brought whole to the table and sliced and served on our individual plates. This is not like the Beef Wellington that I am used to, but, oh my word, it was amazing. Encased in a melt-in-your mouth pastry, the fillet (cooked medium rare) was enrobed in what seemed to be a shredded pork and mushrooms. The chicken livers, instead of being a pate around the fillet were slivers inside the fillet. A marrow bone and pomegranate jus was ladled over each individual serving.
I barely managed to finish. Without having asked and having decided on no dessert, we were then still served a delightful narrow tray of sugar covered tart raspberry Turkish delight type blocks; macaroons; truffles and chocolates to finish off the meal.
I cannot recommend this dish or the restaurant enough. It has been a while since I've experienced fine dining like that.
