Don't let the location fool you, this is a hidden gem. The food and service here are exceptional. Carlos and his wife are charming hosts. I highly recommend the fish as an entree or over a salad. The layered, artistic presentation of each course is lovely. Everything they serve is always fresh and light. The portions are generous. Always save room for the incredible desserts. The bread pudding is always yummy. This is the perfect location for a romantic date or business lunch. The patio dining is great for families during the summer.

Carlos Bistro is the best place for fine dinning in colorado springs that your not required a stupid dress code(broadmoor hotel) .The food is always great but what makes a great dinning experience is carlos and his staff. Ive ate all over the world and i will always remember carlos and his friendly inviting personality. You put great food and decent prices with him u got yourself a 5star place! Ive never had a bad experienve there and the food is always great. If u rate carlos any lower than a 3 your just tryn to hate or that snooty that your opinion doesnt matter to us everyday workn people. Keep up the good work Carlos, its your place or i go to Denver to restarant that can compare.

I don't get the high T/A ratings or the recent kudos by Zagat for this restaurant. Visited with my wife and a group of friends. The service was attentive and fine. the decor was rather tacky. I ordered Crab Cakes, a Caesar's Salad, and a Rib eye Steak. The Crab Cakes were terrible. If you developed an affinity for this dish in the Chesapeake Bay region, save yourself the aggravation of ordering it here - they don't have a clue. The Caesar's Salad was flat and tasteless except for the cheese. The Rib eye steak was not restaurant grade, prime beef to start with and the presentation was appalling - a serving of mashed potatoes topped by a layer of grilled vegetables, topped by the steak, topped by a stalk of celery - stuck vertically into the steak like a palm tree. Add to this a pretentious wine list and high prices throughout. This wasn't great food; it wasn't even good food in my opinion, and it certainly isn't the best in Colorado Springs. Definitely will not return.

I have heard and read great things about Carlos' Bistro. I expected it to meet those expectations.
It was okay: here's why. There is an extensive appetizer selection. We shared three of them.
The tuna tartare seemed more like a ceviche , rather rustic with tortilla chips.The tuna tartare had good flavor. The calamari were good.The escargots were average; we had to ask for toast points on which to to eat the escargot.On the subjectof bread: very disaapointing: cold sliced baguette and tough nut bread. The wine menu is extensive but not client friendly: only one champagne by the glass or a $150 bottle.I look for quality. The main courses selected included steaks and sea bass: all were cooked nicely and were fork tender ( prime beef). I did not understand a cheddar cheese sauce on a filet: huh? Presentations seems belabored and were large. The saffron risotto would have been nicer separate. Dessert selection was uninspired. No espresso available. It was okay but i iwll not hurry back. Service was friendly and just right. It did not meet my 5 star expectations. ..perhaps 4 star based on choices. Everyone has a different point of view. I was looking for more finesse. About $100/person before tip.

My cousins set the reservation and I have to say this was the most amazing food!!! I got the pork chop and it was so juicy, tender and amazing! The food is fresh --tasty and beyond delicious! They make their own gluten free bread which was also amazing! The owner walked me through the menu and said that they could create a gluten free option for almost the whole menu if it wasn't already! Best food!!!!!!!! ITS A MUST!!!!
