I recently visited Steamboat with my parents (one of whom is about to have knee surgery). We decided to take the Gondola up to the top of the mountain where we walked the Vista Nature Trail. It was the perfect mini-hike for us. Not too strenuous at all with beautiful sweeping views. We've skiied the area before, but it is amazing to be able to see all of the color and splendor of the area when it isn't blanketed in snow. The total time to do this walk was about 45 minutes at a leisurely pace (with time for pictures of the views and lovely wild flowers).
There is also a restaurant open at the top of the mountain where you can get a nice lunch.
