“Great experience”

My wife and I ate at this Nobu franchise as a finale to our vacation in Vail. We sat at the sushi bar versus the main restaurant, which I agree is packed too tight and very loud. However if you can get a seat at the bar you can watch the sushi chefs prepare the courses and over hear some of the asinine feedback from customers (top one tonight was the returned dragon roll because the man didn't like seafood). All the staff were great, posing for pictures and offering to take pictures of us. They answered the constant flow of questions from the 8 of us at the bar in a patient and considered manner. We both really enjoyed the meal and as we ordered sensibly, while not cutting corners, the bill was very reasonable. I would highly recommend this place but suggest the sushi bar versus the actual restaurant area for a more authentic experience.

“Like dining in a disco”

We were very much looking forward to dinner at Matsuhisa since we have travelled throughout Japan on numerous occasions and it is one of our favorite cuisines. This was not a pleasant experience.

The menu is extensive but there are no descriptions of the preparations, meaning you probably want to discuss ingredients, method of preparation, etc. with your waiter. Normally, this is an aspect of dining in a new restaurant that both my husband and I enjoy. But it only works if you can hear your waiter. After several attempts, we gave up and ordered good old standbys, tempura and a variety of sushi. Everything was good, but I have to say, not remarkably better than what you can find in any first class Japanese restaurant here in the States. But, at the same time, the prices were pretty standard for the quality as well so no complaints there.

We cannot say the same for the atmosphere. There was "background" music of dubious quality, so loud we could not carry on a conversation across a three-foot square table. Because of the loud music, everyone at adjacent tables was screaming at each other. Plus the tables are so close together that twice during our meal, the waitress serving the adjacent table had her posterior well over our table.

On our way out, we were asked by a hostess if we had enjoyed our meal, and I said bluntly, no,for the reasons above. Her attitude was pretty blasé, which I expect comes from the fact that there was not an empty table in the house, so there's no need to rely on repeat customers. Including us.

“This was a sublime sushi experience for Colorado!”

I've eaten in several Nobu restaurants. This place had sublime food and excellent service. Right in Vail! Check it out!

“Can't spell dinner without din”

On the plus side, some of the dishes we had were quite good: an uni/oyster dish; an off-menu, somewhat bony, but worth-the-effort grilled hamachi collar; the shishito peppers; and a shiso-uni tempura. Having spent a lot of time in the Vancouver area, for me, the signature black cod dish was a bit disappointing. But for a local dining scene that can be monotonous (themes and variations of Colorado lamb, striped bass, salmon on every menu), Matsuhisa was a nice change of pace. Surprisingly, even with three bottles of modestly-moderately priced bottles of wine (Domaine Chandon, a Verdicchio and a Meo-Camuzet Clos St Philbert), the bill was less than expected.

The minus side: due to the restaurant's ample amount of acoustically reflective surfaces (and the staff shouting, "Irashimase!!" or something along those lines as a greetings to arriving guests), this place was extremely noisy, making conversations, short of using flag semaphores, quite difficult. The staff-/guest-generated din reminded me of the sound levels encountered in the Farrell's Ice Cream Parlors of my childhood. Maybe the trick is to dine early or late, or to try and get a table in the nook-like areas around the periphery.

“Simply Excellent”

We visited Matsuhisa with some friends this month and as always it was great!
Even though it was a little bit noisy and crowded, the service was impecable and the food was superb. Definitely a must!!
