My family of two adults and three young children was pleasantly surprised to see our room at the Baymont. It was very nicely decorated with a spacious mini-fridge that actually had a functioning freezer and a small microwave and even separate "kitchen" and bathroom sinks. There is also a large, flat screen TV, and air-conditioning units with very responsive thermostats so that you can set the temperature to a comfortable level. The mattresses were excellent.
We never did use the pool or volleyball court, but they looked well-maintained.
On the down side, we didn't have any shampoo in our room for the first two nights, and we had a burned out light bulb in a lamp that was never replaced even though I brought it to the attention of the front desk. Also, the fan in the bathroom didn't work.
The breakfast was sufficient, but lacking in non-carbohydrate whole grain choices. There are the following offerings: three kinds of cereal with whole or low fat milk; white mini-bagels with cream cheese; frozen waffles and syrup; white and wheat (not whole wheat) toast with butter, jam, and peanut butter; and mini doughnuts from a box. Some fresh fruit and hard-boiled eggs would have been welcome.
There are lots of restaurants very close to the hotel, and a grocery store a mile down the road. We saved a ton of money by not having to eat three meals a day at Disney. We ate breakfast at the hotel, took lots of snacks with us, bought one meal at the parks each day, and then ate food we bought at the grocery store and kept in the mini-fridge.
The shuttle service to the parks was not as convenient as I hoped, but it worked. The shuttle left at 9:05, looped through the nearby hotels, and delivered us to Animal Kingdom at 9:25 each morning. There was no earlier shuttle. From the Animal Kingdom we would have to catch a Disney Bus to other parks; so at times we didn't get to our destination until 10:00 or later. Also, shuttles back to the hotel are limited with the last one leaving from Epcot at 10:15 pm. One night, we could not make the 10:15 shuttle; so we took a Disney Bus to the Animal Kingdom Resorts and asked the front desk to call a taxi. The short ride to the hotel cost less than $7. In hind sight, transportation would have been much easier if we had stayed at a Disney Resort, but that would have been quite a bit more expensive, too, especially since Disney makes families of five get two rooms or a suite. If you are taking a taxi from the airport, be prepared for a $62 fare! We were able to take the hotel shuttle to Disney's Animal Kingdom, and then take a Disney Bus to the Disney transportation center where we caught a Lynx city bus (they have schedules at the transportation center) to the airport (a 70-minute ride) for $7.
