Fleur de Sel is located in what used to be the club house at the Highlands Golf Course; it offers great views in addition to some of the best food available in North Idaho.
Fleur specializes in French nouvelle haute cuisine -- in contrast to cuisine classique. The food is light and delicate and emphasizes presentation. Fleur has improved on what food critics Henri Gault, André Gayot, and Christian Millau had in mind when they brought this style of cooking to the fore (if you'll pardon the golf pun/analogy).
My wife had received a gift card to Fleur de Sel, which she used for my birthday celebration (hmmm, wonder if I should be offended by her "regifting" what some else had given her?), and am I ever glad she did. As an entree, I had the barbecued lamb chops done in a spicy plum barbecue sauce. Out of this world. My wife had a shrimp dish that would have made Bubba Gump proud. From hors d'oeuvre to dessert, this was one of the best dinners ever, and on a par with anything on the Avenue des Champs-Elysees in Paris.
Beyond the hyperbolic descriptions of the food, everything from table settings to wait staff is way above the norm -- more akin to what you would find in New York or San Francisco. Prices are equal to these cities, as well.
I put Fleur on a par with or beyond any five-star dining one can find in Coeur d'Alene (Beverley's) or Spokane (Palm Court at the Davenport). If you have a special occasion you want to celebrate, I would recommend including Fleur de Sel in your plans.
