The Watershed has a welcoming and laid-back relaxed atmosphere. It was the perfect spot to stop and spend time with friends in an otherwise busy sightseeing day in Chicago. I was immediately surprised at how comfortable it made me feel.
If your grandparents lived in the north east most of them had basements and a good deal of those used the space to entertain and serve drinks. The Watershed is the sophisticated version of my grandparent’s basement; dim lighting, comfortable seating and the feeling that your grandmother is upstairs baking you a pie at that very moment.
I have to admit that I am not the biggest bar goer (an understatement) but if I had a bar like the Watershed local to me I might reconsider my position. The $10 cocktail menu caught our eye after we sat down and we made our selection and started to soak up the atmosphere. Several drinks in we asked our waitress for a recommendation and she suggested the Italian Gray hound and it proved to be the favorite of the night.
This experience really was the cherry on top of a great trip to Chicago. Any future trips to Chicago will include time spent at the Watershed. Do yourself a favor and visit this charming bar and get to know more of the relaxed side of Chicago.
